Flight 1 - Champagne (2 notes)

Some nice evolution here, with a touch of honey and butterscotch on the nose. Looked still in the glass but certainly fizzy enough on drinking, it was quite dry and pure, rich yet elegant, long. Really enjoyed this. 5g dosage.

Clearly much younger and fresher than the Apollonis. More aggressive bubbles. Dry and refreshing.

Lovely aromatic nose. Dark fruits, licorice, forest floor, very pretty and elegant in style. Lovely length, very fine. More dried fruits with time in the glass. Complex and in a nice place but will relatively youthful for a 98.

Needed some swirling to get going but this was lovely, dried fruit and a touch of pepper on the nose, lovely deep fruits on the palate. A fine tannic structure. Lovely wine.

A burlier wine than the Gaja and Giacosa before it. Forest floor, some conifer, slightly medicinal. I enjoyed this more on its own after some time away from the Gaja and Giacosa.

Not sure about my notes on this one. Seemed tougher, more rustic initially and then gradually the fruit came into more focus. Good but not great, and suffered a bit by comparison on the night.

2 of 6. Very pretty on the nose, with an interesting truffle aroma alongside the fruit. Elegant, sweet fruits on the palate, licorice, lots of fine tannins, still young. This is now showing much more development than the first bottle a few years ago. Will probably leave another few years for the next one. I was worried about this given some of the notes on CT below, but this surprised on the upside in comparison for me.

Flight 5 - Sweet (1 note)

Lovely nose. Extremely fine marmalade, lychee, passion fruit, lemon curd. It was late in the dinner at this point but I recall it was quite a thick sweetness on the palate, actually slightly too much for me. But I loved the aromatics.
