Burgundy Focused Evening at Dave's: [Tasted Single Blind] Notably lighter in color than the previous. Still youthful and doesn't feel like this had budged much since last tasted over 6 years ago.Certainly focused more on the autolytic side of champagne which I love. Nose is of toasted bread, croissant, granny Smith apple, barley sugar, and fresh lemon peel. The palate feels just a bit more round with clean acid on the finish, and perhaps a slightly higher dosage which I'd peg at around 6-8 g/l. Glad to still be holding one bottle. Probably worth waiting even a bit longer for it to develop.

Blind 1995 Bordeaux at Table, Donkey and Stick (Chicago, IL): From magnum. Outstanding. This shows so much pinot character throughout. Dense and potent, with amazing depth and extract. There's an absolutely enchanting aroma of red delicious apples on the nose. The palate is thick and richly textured, but not heavy. Fresh minerality and a touch of sweetness.

Everything you'd want is in a Champagne. Citrus, a touch of apple and plenty of yeast. Very balanced in a long finish, within an ample complex body. Wish I had more.

- Light gold color and aromas of grapefruit, lemon, brioche and roses. It's balanced and has flavours of grapefruit and apple with minerals coming through after a while. Very long finish with apples and minerals sticking around. A medium body wine. Round texture.

From Magnum-very good example of the vintage. This champagne is very tasty and can be used as an aperitif or with food. This was served with a smoked trout brandade. The fruit is pure with depth, with good acidity, with a hint of toast. Very good balance. Still young out of magnum.

Bottle 5 of 6 and best experience yet. Showing well tonight with good complexity in a firm grip. Quite elegant with both yellow and red apples on the nose and green apples on the palate. I like the uncomplicated and fresh style, yet with lots of nuances to enjoy. (90-91 pts)

Friday Night Double Blind Tasting $40+ (Bin 75): Fine bubbles, yellow green color; strong green apple, chalk, powerful, rich, almond; rich, vivacious on the tongue, chalk and green apple, lots of mouthfeel, high acid, long apple and lemon finish; tasty; lots in the tank for graceful cellaring; 91+.

Lovely complex champagne along the lines of Canada's note, restrained oak and mushrooms and intriguing fruit of various types. Medium long finish and chalky minerality focusing the palate at the end. Very nice. At peak now I suspect.

Super Tasting 5 of 6 - Chris does 1983 Bordeaux (Dundas, Ontario): Nose of citrus, lemon peel, ginger, green apple, biscuit and herbs. Palate shows candied ginger, lemon, minerals, caramel, biscuit, green apple and mushroom. Very nice with good length. Solid champagne.

Tasting Dinner Series (5 of 6); 1983 Bordeaux Horizontal and Trickery (Chris' House): Light straw gold in colour. Popped and poured. On the nose, citrus peel, mineral, toast, a touch of mushroom, herb and spice. On the palate, brisk acidity, not overly dry. Finishes long accentuated with citrus and mineral notes, with a slight bitterness. Nice, should improve in the cellar.

Super Tasting 5 of 6 (1983 Bordeaux w/cali ringers, Hosted by Me): Was still doing some kitchen prep at this point so notes are brief. Really lovely nose on first pour. Dough, toast, lemons, apple, really classic, with plenty of fruit. Dosage and acid are in check, and the finish was quite long.

Intense, puckering aromas, with slight minerality. The palate is light in flavor, and textually creamy though at the same time rather thin. The finish is lean, showing tart minerals. Overall, quite light.

This was bright and fresh, good citrus notes and "blond" yeast; lively in the mouth, but lacks depth and short finish. Worked well with spicy Pad Thai though.

an unusual and impressive mixture of vibrant and oxidised fruit (like fresh cut Granny Smith and bruised Granny Smith), oxidative notes vergin gon nuts (chasew/almond), fizzy on front palate then lulls on mid pal befor eearth and fruit return on back pal, good length, easy crowd pleaser perhaps, but a nice one

Ordered a bottle at Pops. Hebrart is a small grower/producer. A blend of Pinot Noir from the Marne Valley and Chardonnay from the Cotes des Blancs. Some funk on the nose when first poured. Loaded with character. Round structure. Fine bead. Almond, dough and citrus notes. Full bodied. My favorite champagne of the night. 94 points.
