Dried apricot and new wood scents, followed by a very ripe, oaky mouthfeel, lacking balance, lacking in depth and lenght. More new world than Chevalier, not at grand cru level for my taste, quite disappointing.

Opened in HK. P&P and then enjoyed mostly over lunch, followed by finishing off the final bit in the evening.
At the start, we had a few issues with this bottle - it wasn't chilled, and probably didn't go too well with the food we'd ordered (Chinese), and was overshadowed at the start at least by the Keller Kirchspiel '15 that was being served alongside it.
However, after managing to control the temperature better and letting it breathe, this really started coming out of its shell: beautiful buttery, nutty, caramel notes. Not quite a popcorn explosion, but performing very well. Great integration and freshness from the acidity. Long finish. A wonderful Chevalier.
I'd say there's some slight upside to be had with a little more patience, but it's in a great spot right now. Just make sure you give this enough air - it can definitely handle it. Would be very happy to revisit, either now or in 3+ years time, and thanks as always to G for the wonderful treat!

Elegant like a budding ballerina. Mild mid-palate but perfectly balanced with lemon oil, tangerine oil, subtle butter and caramel. Long silky finish. This wine needs more cellaring to achieve its full potential.

This shows real complexity and breed, just a marvelous wine that at a very enjoyable place now, but could coast along for awhile. Thank goodness no POX in evidence!

In a wonderful place. Complex aromatics of spearmint, white peach, smoky mineral and toast. There is something mildly exotic sneaking into the flavor profile. It is rich, yet contained and there so much mineral underneath layers of sappy orchard fruits. It has great volume and fabulous cut. Length is imposing.

Interesting pairing of Sauzet’s round style and a lean vintage, which works. Floral and flinty aromas, with ripe orchard fruit on the entry and mid palate, then the finish is owned by 2011’s lean and mean character - which I happen to like. I was thinking “minerals galore”, but “strewn with geological matter” is a much nicer way to phrase it.

Expressive nose of coconut ice, guava, white peach and vanilla. It is rich, layered and powerful, with good volume, detail and a fine, lingering finish, strewn with geological matter.

Opened at Sumi, Noosa Junction. The colour was a correct pale green-gold with a lovely nose of yellow peach, lemon and touches of lime zest, white flowers and fennel. The palate is medium weight with that beautiful fruit framed by a background of limestone, dry extract and zesty acid that provides plenty of drive and grip. The finish is long and the overall impression is of a very fine Chevalier. There is some of that 2011 tenderness that led us to debate whether further cellaring would bring further complexity or simply tire the lovely freshness and zest that it demonstrates now. Tonight it was terrific !

Popped, poured, consumed over 4 hours. Restrained nose that continuously improved with air. Flavors of ripe fruit, but nicely balanced, with a bit of oak. The flavors really picked up from the mid palate through a moderately long finish, as others have noted. Showing well, but I think this is still a baby with many years of life.

Took around 90 mins to open up a bit. Nose was a bit reductive with flint, minerals, almond, vanilla oak and yellow fruit. Palate had the chevalier grand cru elegance. Unlike many 2011 grand cru white that arw already drinking well, this bottle was still a baby. Still very youthful. Give it a few years to unfold the nuance and the oak to integrate. I liked the weightless intensity from the mid to back palate. There was a good balance between acidity amd ripeness. Certainly will age well. I am curious to know if sauzet will get out of its premox reputation with its reductive style in recent vintages.

La Paulée de San Francisco - Grand Tasting (The Fairmont - San Francisco CA): Tasting, brief note. Very impressive, this showed classic Chevalier elegance with floral, spice and restrained orchard fruit. There is a lot of fruit here, but the terroir really comes through with the wine's great harmony as it picks up intensity from middle to finish. Give this time. Very good Grand Cru.

Opened at 1947 in Courchevel. P&P and enjoyed over dinner.
We had two bottles, both of which were excellent and consistent. No extensive notes taken but enjoyed very much.

Most precise and Chevalier in character of the first flight. Tension, nervosite, and absolutely killer pairing with caviar. Served blind.

Bird's Eye View of 2011 Burgundy-The 2014 La Paulee Grand Tasting (Fairmont Hotel, San Francisco): Oh man, this one just brought tears to my eyes (especially since I can't come anywhere near acquiring it). Creamy, old vine concentration. Subtle, beautiful fruit, unbelievable length. Incredibly fine, even outstripping the Colin-Morey Batard in my opinion.
