Another Great Luis Tasting! (Cahill Bistro): This has come a long way and is peaking now, at least for my palate. Rich, creamy mouthfeel that just seduces you from the start! Lots of creamy pear and notes of apple and butterscotch, also hints of tropical fruit and chalk. An excellent Oregon Chardonnay in a great place....drink up! Easy 93!

Upon the opening, the cork was cracked and had black spots. On the nose—lemon, grass, unripe bananas, menthol, inorganic smell—like paint or plastic. On the mouth—lemony with high acidity. Sour notes from the beginning, with a slight hint of bitterness mid palate and sour notes again at the end. A full bodied wine with viscosity. I don’t think this a graceful wine. It didn’t pair well with anything and it doesn’t taste that great by itself. Disappointing considering this is their “signature” Chardonnay. 75

This has aged very well with hues still straw to light gold. Aromas if baked lemon, sweet cream, graham cracker, and chamomile. The palate has likely gained a touch of weight, though this can likely go 5+ more years. Lovely and a perfect pairing with homemade chicken noodle soup followed by a movie and popcorn.

Straw to light yellow color in the glass, clear looking throughout. Nose of quince, yellow pears and wet stones. Flavors of kumquat, yellow pears and minerals. Medium to bright acidity, medium body. Drink over the short term.

Deft winemaking, including judicious use of oak, and intriguing terroir are showcased here. The wine changes inflection in a way that few New World Chardonnays do. An elegant and complex wine, excellent frame, and beautiful substance. Reminiscent of the Domaine Serene style, but more intriguing. Worth looking into and cellaring for five to seven years. There is an upside.

Light hints of butter, oak and tropical fruit. Beautiful juice and long lasting finish. Delicious Chardonnay in a great window right now.
