Taut, dusty fruit with hints of kirsch, smoke, licorice, dark cherries ... but still very very tight even after 2 hours in a decanter. The other Pavelot Savigny-les-Beaunes are much more approachable right now (see my note on the Lavieres 5.28.22). For drinking now would score this 90 given how tight it is, but the potential is excellent and thus the higher score.

I opened a bottle last night and wrote a scathing review, since deleted. Then I realized what an idiot I was because I only gave it 20 minutes breathing. It was thin and tart. I am having the rest of that bottle now, after a decant and a one hour breath. It excellent, and getting better and better. That tells me this needs more age. He is known for long lived wines, and I see why.
Today, this is on the lower end of medium bodied, so match food accordingly.
Very burgundian indeed. Dark fruit and anise on the nose. Cherry cola washed with tobacco, sour cherry, and baked spices on the palate. Makes you feel like flying over a waterfall of cranberry chocolate.

Out of 375ml. Drank half and saving 2nd half for tomorrow. Nose of cherry, slight petrichor and dust. Taste was drying tannins, slight tart and acid for structure. Didnt find much pleasing fruit. This wont be a re-buy for me.
Medium, ruby color Developing, medium + aroma intensity of roses, forest berries, sour cherries, strawberry, mushroom, forest floor, white pepper, tobacco, smoke, and roasted meats. Dry, medium + acid, medium alcohol, medium tannins, medium body, medium flavor intensity, and medium + finish of strawberry, sour cherry, mushroom, smoke, roasted meats, and tobacco. Very good quality. Can drink now and has potential for further aging.

Opened one hour into the decanter, the wine didn't show much. Close nose, mouth muted with a disjoncted finish, cannot imagine this was a pinot noir. Start to open a little bit after 3 hours, but nothing to talk about. Green and tart finish. I bet this needs to cellar for a 3 to 5 year before trying again.

Dark fruit. Soft tannins. Not a lot of acidity. Don’t recall much spice. Popped open from the wine cooler so at 57 degrees so it started out too cold. I suppose I crave acidity and spice in a Pinot.

Serious stuff, lots of dark fruit, cassis and black cherry mixed with oak accents, black pepper, lavender and violet. Robust structure today in the mouth with firm tannins that come across as a bit austere. Mouth-coating finish of rich fruit. This should be interesting to follow over next 10-20 years. Great material present.

Young Burgundy Flight (The Wine Club, San Francisco): Light ruby. Ripe berry nose, unusual for Savigny. Medium weight, certainly not overly fruity on the palate. Soil, herbs, lots of structure, but not as brambly as it often is. Good but not compelling.

More of everything than the other Pavelot 1ers, dark colour. Very deep in the nos with a little smoke and spice, too . Deep and broad fruit on the palate. This is an excellent young burgundy, no matter the village. Long future.

Two 2015 Pavelots: Dark velvet. On the bouquet, damp, dark soil, blackberries and dark cherries, black spices, sous bois and mocha. In the mouth, very backward and closed. Earthy with black cherries and other black fruit, liquorice and cacao. Also a suggestion of stewed plums but I had it as very ripe, not overripe. Energetic acidity. Real matière. Tightly coiled. Slatey minerals and some bitter tannins on the finish. It drank the best on the third evening. Probably not worth opening today. It is seriously structured and needs significant cellar time (10-12+ years).

Première bouteille ouverte par pure curiosité. Les autres patienteront sagement. Robe foncée. Assez ouvert au nez qui reste très primaire sur les fruits noirs et rouges avec une trace de fût neuf, en bouche la trame est serrée mais les tanins ne sont pas durs. Belle persistance. Dégusté sur 2 jours avec passage en carafe. A garder!

2 hour decant. Paired with seared duck breast. Fruit is sublte (blue/black). A tad dusty profile but in a good way. I can recommend.
