Golden colour, almost amber. Fully mature BdB champagne. Good mousse despite its 30 years. Nose is a bit closed and not as expressive as expected. Better with some air and 12 C temp. Lemon tarte, yellow apple, some bread, and little oxidized notes. High citrus driven acidity and quite dry taste. Lost a bit of fruit. Long, but not very intense finish. Ok to the amuses and very good to "Bisque de homard". Probably better 3-4 years ago. Drink up.

Dinner at Jade Court (Chicago, IL): Drinking fabulously, despite being one of psmith's always-corked bottles. The nose is fairly mild, and doesn't show too many mature notes. There's amazing freshness overall here, with an incredible youthfulness thanks to the acidity. Sometimes I find older chardonnay can get a little funky and weird, but there's none of that here.

Lovely yeasty nose of ripe tart lemons and fresh caramel. Great power and intensity and still drinking young but showing great integrated flavors of tangy pineapple, tart lemons and copper minerals. The finish is so satisfying with a fantastic crunchy complexity with notes of caramel and smoky chalk. A stunning blanc de blancs with many years of life ahead. 95+

Seen some commentary of late about the 1996s not aging well- a lack of acidity- but this bottle was a pleasant relief. Honeyed with some brioche on the nose, it opened up over 30 min. Still hot fine bubbles and importantly good acidity. Better than the '96 Rose I had earlier in the year

Much better than the 1996 Pol Roger Rose from the other week. Golden yellow in the glass. The acidity that has served it well is still there, but now more brioche on the nose. Honeyed, apricots. Showing very well still. As always - needs food to do it justice.

Medium gold color. Nose is rich and complex: cooked muesli, yeast, fresh baked bread, apple, apricot, coconut milk. On arrival, good bead and lively acidity. Creamy, fruity, nutty and dough-y. Wonderful, simply wonderful. With our 35th anniversary dinner. Bottle #3 of three.

Drank it DEc 2007,much too young but I liked the acidity and creaminess of this jewel, brioche toast, citrus bread and yeast, it will last at least 10 more years. One of my favorite champagne years if the grapes had be ripened, would like to drink another bottle

Bottle from heaven. I have no idea where or when I purchased it. Much more appley than my previous two bottles, with orchard fruit overtaking the previously dominant citrus. Just the right amount of brioche and bead. I've always loved this BdB.

Needed some time to open up but was quite fresh and lively. Heavy on the citrus but not heavy on the palate, and without a heavy dose of minerality. Great acidity and a touch of honey with some exposure. Provided great balance to fried Cantonese style seafood.

For aperitif we drank Pol Roger Chardonnay Brut 1996, still remarkably fresh and zesty with copious quantities of citrus and melon fruit, pastry shop smells alongside the most gorgeous digestive biscuit character. Frighteningly good persistent acidity, wonderful swirling mousse on a interminably long finish. Fantastic start. I thought it worthy of 94 points and a drinking window of up to 5 years.

Brown Bag Wine Dinner at Two Chefs; 10/4/2011-10/5/2011 (TWO CHEFS, MIAMI, FL): - Light gold color with small pearls and aromas of lemon and geranium. It's in total harmony and has flavours of lemon with a light/medium body. Bright texture with a medium finish - Al's Champagne. I quickly IDed it as either Pol Roger or Bollinger. Slightly odd last (of 4) bottle of this. Definitely a whiff of wet cardboard (corked) but somehow this didn't mask the otherwise beautiful intensity and persistence - I think a touch of oxidation helped offset it somehow. Weird! Continued to drink on the expectation it would deteriorate significantly as they always do but it didn't!

The lemon fruit on the nose smells remarkably youthful, there is some toasty maturity but this is really striking me as being quite undeveloped for a 14 year old bottle of fizz. The combination of fruit and that toasty, biscuitty complexity make this a most pleasing bottle of fizz to sniff. But I need a drink after being awake for much too long so I’ll stop sniffing. By arse, 60s student dormitories have less acid than this palate. If it were not for its richly buttered-toast and powerful fruit flavours this would seem rather severe. The balance is just perfect, though, a joy to drink and no rush to finish off any bottles you may have.

I had no idea this would be so good. Probably at the apex of its evolution and maturity. Great combination of ripeness, acidity, elegance and complexity. Citrus, subtle hazelnut, ginger and floral notes. Incredible depth, mouthfeel and finish. A real "wow" wine. The bad news is I'm down to one remaining bottle. The good news is I still have another bottle.
Mature and quite complex with meaty aromas of pickled ginger, toast, and Christmas cookies. Full bodied on the palate with sweet cherry, cardamom, vanilla and mineral flavors. Great balance of sweetness and acidity.

A really impressive bottle of this wine. I'm not sure it isn't as good or better than the 1996 Comptes de Champagne. Youthful color with a hint of green like old time Chablis. Rich mousse. Some toast and citrus on the palate but what impresses most is the extract - really immense as champagnes go.

Impressive wine. Chalk, minerals, florals and vanilla just assault the nose, I must have had my snoz in the #4 for a solid minute just taking this in. There's also a touch of hazelnut. What a mouthful of wine, everything is in perfect balance here, the acidity is just magnificent. If you're seeking a complex 1996 BdB, look no further.

Tasted 2006-02-17, Wellington OL, Citron Fantastic wine in every way. Nose was full of rich, toasty yeasty notes. Palate had nice weight, mature flavour profile, great creaminess yet reasonable acidity; seemed slightly oaky, and yet I don't think PR ever uses oak. Beautifully balanced, great body, very long, very complex. Best Pol Roger I have had. In a blind flight I thought it was the 1996 Giulio Ferrari.

Incredible. While the acidity is mouth-puckering, it is beautifully blended in with the fruit and the complexity. It will evolve in bottle, but given that this is giving so very much pleasure right now, why wait??! Delicious.

A little premature sacrificing it so young. It's got acid to make it last another 5-10 years. Wonderful lemon, pear flavours. Fine, persistent mousse. Tastes like the best Chablis with bubbles. Delicious with poached eggs with cream and anchovie sauce...

beautiful champagne. I wish we had more! Somewhat yeasty, with a floral nose and citrus on the palate. Incredibly well balanced.

Fantastic wine in every way. Nose was full of rich, toasty yeasty notes. Palate had nice weight, mature flavour profile, great creaminess yet reasonable acidity; seemed slightly oaky, and yet I don't think PR ever uses oak. Beautifully balanced, great body, very long, very complex. Best Pol Roger I have had. In a blind flight I thought it was the 1996 Giulio Ferrari.

Incredible. While the acidity is mouth-puckering, it is beautifully blended in with the fruit and the complexity. It will evolve in bottle, but given that this is giving so very much pleasure right now, why wait??! Delicious.

A little premature sacrificing it so young. It's got acid to make it last another 5-10 years. Wonderful lemon, pear flavours. Fine, persistent mousse. Tastes like the best Chablis with bubbles. Delicious with poached eggs with cream and anchovie sauce...
