The wine showed high level of acidity which tells me it could live on for 10 years more (given the bottle is in good condition), but I do not see any reason to hold on to it. Cork was good but some seepage to the halfway point. Nose was somewhat reticent with a hint of oak. Very rich honeyed palate with layers of dried stone fruit. Good streak of acidity from the Sauvignon and very long refreshing finish. Not sure about how much longer to keep unless one could guarantee impeccable provenance.

From 75cl, same impeccable provenance as my last bottle (TN 20.06.2016). Exquisite cork, opened but not decanted 1 hour, continued to improve in the glass. Refined scent with jasmine, a hint of incense and, of course, luxurious oak. The entry is highly concentrated yet bright, bouncy and acidic; the mid-palate a miracle of balance between precise structure (meticulous use of oak), acidic nerve and just enough SB varietal typicity to remind you we're not playing in a –very– elevated league of white Burgundy. Almonds, almonds, almonds. Long, resonant finish. This is perhaps the "lightest" wine I can remember tasting which displayed this degree of concentration and aromatic complexity. Peak maturity now, but with plenty of time in hand. 94P

Domaine de Chevalier vertical with Olivier Bernard (Le Cafe Descartes at the French Embassy): Expressive nose displaying rich yellow fruit, kiwi, lemon curd, crème brulee, a hint of green, honey and limestone. Excellent concentration, nicely layered concentrated sweet yellow fruit, rich and sweet yet harmonious and nicely detailed, medium acidity, good mineral presence and a long rich yellow fruit driven finish with lanoline and light caramel at the end. Someone thought this was too young, which makes no sense to me but…. This is drinking perfectly, still showing generous rich fruit but also complexity via lanoline and honey.
Domaine de Chevalier Tasting (French Embassy): Gorgeous aromas, waxy, almond, hay, quince, lemon, mineral dust. The palate is plush but racy, with exquisite minerals and saline, balancing off of this honey, almond elements. Apricot and orange marmalade fruit, with all these complex mineral, dusty elements. So pretty, deep and lively, this has many, many years ahead.

This was the third bottle opened him a case purchased at auction. Three years ago I’ve visited Chevalier with Dewey Markham, Author of the definitive guide to the 1855 classification. At that visit, we tasted several vintages is going back to 1987. This 2000, is halfway there. Some of the acidity is gone, having been replaced by warm notes of nuts, stone fruit, especially dried apricot. The longer stayed in the glass, the more these notes became more pronounced.
I have been burned by many Burgundies that were prematurely oxidized, and of course I worried about this wine. No problem. It is a wonderful expression of the blend, and probably could go another 10 years.

Deep straw golden colour. This needed twenty minutes to open up, but developed eventually an intense nose of roasted almonds, ripe stone fruit and some burgeon de cassis. In the mouth medium bodied, there is some nice tension and grippy texture. Excellent length. To me not as complex as a top notch burgundy, but certainly very interesting and rather elegant.

Medium lemon yellow. Subtle coconut, bruised apple and quince. Firm, full body with a very taut acid structure that lends youthful freshness to apple, soft waxy notes and delicate roasted hazelnut flavours. The finish is long, crisp and fresh. A brilliant bottle. Drink now and perhaps to 2022.

5th of 6, pnp, perfect cork and level, much nicer and more harmonious than previous bottles, even stood up to omelette, very long, tighter than before with only the slightest hint now of blowsiness, fully mature. Just about F (17.5).

Deepening yellow but still bright, this is the 2nd time of tasting this within the past month, from a case purchased on release and stored in ideal conditions. Waxy notes and a full bouquet that is moving towards nutty but still fresh with plenty of bright acidity. These bottles were in terrific condition and drank beautifully alongside crab gratin.

Wow. This wine has really come together now. Lovely creamy texture. Melon, litchi, kiwi and finally the wood well integrated. When tasting it before dinner there was a slight, very good, sherry aftertaste present. Good acidity and medium aftertaste. Great, white Bordeaux. Like it.

From 75cl, perfect cork. Opened but not decanted 1 hour, improved until the very last drop 2 hours later. Honey, lanolin and Sauvignon Blanc (duh) scent; very lovely sour-floral-nectar entry with powerful crescendo to a marvellous, full-bodied, sour mid-palate. Long finish. This still tastes vivid, perhaps at the start of full maturity. No hurry. 91P

From magnum. Tasted next to the 2010 Smith Haut Lafitte Blanc. Not much more evolved than the 2010. Expressive and complex on the nose, ripe stone fruit notes mixed with citrus fruit, lemon peel, honey and slightly smoky notes. On the palate rich and a little waxy, creamy. But there is lots of acidity and vibrancy lifting this richness and creating a wonderfully balanced mouthfeel. Impressive length. Excellent and based on this magnum with lots of life left in it. 93-95

With lunch at Kitchen W8. Decanted for 90 minutes. Light greeney gold colour. Nose a little tight but showed rich apple and touches of minerality. The palate was almost Mersault like with slightly honeyed creamy Apple and touches of hazelnut, but also with unmistakable Sauvignon Blanc notes and freshness. Delicious and 5+ years left. ****

A Randy Birthday (The Straits Wine Company @ UE Square): Last bottle at the end of a very long wine night. This is the little that I remember of this bottle: Zingy high acidity. Tight and grippy. Lemon-lime and some minerality. Still fresh despite the age. Judging by the pedigree, was really a waste to have opened this at the end of the night. Not enough time for it to show itself, and most us already lacked the focus by that time of the night.

We suspected this wine was over the hill, and, unfortunately, we confirmed it early on. Dark yellow in the glass, a nose of yeast, full in the mouth with some yeast and fruit, but a lack of acid and zip ultimately left us without satisfaction.

I have had the 2000 a few times before and it is quite nice although I have seen some bottle variation. The wine gives aromas of wet stones and citrus, although you can tell that has faded into the background with age. On the palate, the wine has a nice creaminess to go along with an apple and a mineral note.

The 2000 Domaine de Chevalier Blanc is a rockstar! I'm sad to say this was our last bottle in the cellar and we'll need to find more. Before the tasting notes, it's worth noting that the harmony of this wine is nothing short of superb. Each element combines to make a truly pleasurable experience in the glass. The nose exhibits lychee and late harvest semillon grapes sautee'd with meyer lemon. The floral mouth is expressed through hints of lavender and a medium finish. Terrific wine, and a real treat to enjoy. This still has much life remaining!
Drank next to a 2009 Marston Family Vineyard Albion (rating 94; softer, tangerine core), 2010 Marston Family Vineyard Albion (rating 95-96; fresh grapefruit core) and 2004 Pavillon Blanc du Chateau Margaux (rating 91-92; more almond/marzapan). All four wines showed exceptionally well.

Ultimate Parker in Singapore Mega-Tasting (The Fullerton Hotel, Singapore): Brilliant stuff. 70% Sauvignon Blanc, 30% Semillion. This had been decanted for about an hour when I got to it, still tight, but showing tons of quality. Lovely nose. Waxy, honeyed notes, some vanilla, and a little touch of kumquats. A bit oaky at the moment, but with a clear amount of fruit layered under that. I thought the palate was rather tight, but very good. Lovely acidity, lovely minerality, with a sea-shell like quality to, along with a nutty overtoned and perfumy flower notes. What was really impressive was the structure of the wine though. Lovely texture, rather grippy, very textured, moving into a medium-long finish which showed sweet ripe lemons and a rush of mouthwatering acidity. Lovely wine, still has plenty of time to go before peak. I would leave this for another couple of years for good measure.

Grandios. Schon das Bouquet ist betörend: Zitrus- und weisse Früchte aber auch ganz feine Würze. Am Gaumen ganz viel Schmelz, der aber dank der wunderbar säubernden Frische überhaupt nicht kleben bleibt. Ausserdem extrem mineralisch und vielschichtig. Scheinbar unendlicher Abgang. Wirklich eine fantastische Flasche.

ICCCW 2000 Bordeaux Horizontal Tasting (Jade Palace, Forum Galleria): The expert panel really seemed to like this wine. I personally thought it was very good, but not outstanding. Colour was a yellowing-gold with green inflection. Salty, briney nose, showed saline oyster shells, some browning apples, kumquats, a bit of beeswax, some honeysuckle, pineapples, a biscuity tone and some slated nuts. Very interesting. Palate seemed rather younger - balanced and integrated with fresh acidity giving the wine a good shape, it showed fresh tones of ripe lemons, apples, honey and again, saline oysters - all in a mouth-filling melange of flavours. Finish showed just that little bit of glycerin. This was rather rich and fat, but by no means flabby, given the fresh acidity. It ended with a note of bread and a long sea salt and mineral tail. Would be lovely with mussels I would imagine. Starting to about peak now. I think I would give this just one or two more years and then drink up.

ICCCW wine class (Jade Palace Forum): Honeysuckle, florals, apple juice left on the counter and subsequently very biscuity and sweet corn. Fresh mouthpuckering lemony acidity with lots of minerality . Chalky texture. Somewhat waxy . More lemon zest. At the moment, the nose and the palate doesnt quite seem to match. Needs time?

This is a good full wine with a very nice bee's wax component. It's long, round, beautifully textured with gobs of tropical fruit, but there's too much oak. Will the oak recede in time? I doubt it. I've got one more bottle and will hold to see.

Had one last year in June. Let's try it again. Ripe butter melon notes emerge, fine, delicate, typical Pessac.. The palate is lovely, salty even with a nice melony mineral undertone. Great wine....too bad this was the last one :-(

Dinner @ Christiansholm (Christiansholm): actually got this one blind, proud was I - it is textbook white bordeaux, one should drink more of that stuff. The wine was domintated by sauvignon blanc, but with a creamy backbone of the semillon - and wonderfully open and ready for business (they can be difficult young).

Decanted for a bit before tasting because it was quite closed at first nosing. An intense old wine effect at first nosing, a little oxidated at first, then ripe butter melon notes emerge. The palate is lovely, salty even with a nice melony mineral undertone. Great wine....but has to be drunk NOW.

Grandios. Schon das Bouquet ist betörend: Zitrus- und weisse Früchte aber auch ganz feine Würze. Am Gaumen ganz viel Schmelz, der aber dank der wunderbar säubernden Frische überhaupt nicht kleben bleibt. Ausserdem extrem mineralisch und vielschichtig. Scheinbar unendlicher Abgang. Wirklich eine fantastische Flasche.

ICCCW 2000 Bordeaux Horizontal Tasting (Jade Palace, Forum Galleria): The expert panel really seemed to like this wine. I personally thought it was very good, but not outstanding. Colour was a yellowing-gold with green inflection. Salty, briney nose, showed saline oyster shells, some browning apples, kumquats, a bit of beeswax, some honeysuckle, pineapples, a biscuity tone and some slated nuts. Very interesting. Palate seemed rather younger - balanced and integrated with fresh acidity giving the wine a good shape, it showed fresh tones of ripe lemons, apples, honey and again, saline oysters - all in a mouth-filling melange of flavours. Finish showed just that little bit of glycerin. This was rather rich and fat, but by no means flabby, given the fresh acidity. It ended with a note of bread and a long sea salt and mineral tail. Would be lovely with mussels I would imagine. Starting to about peak now. I think I would give this just one or two more years and then drink up.

ICCCW wine class (Jade Palace Forum): Honeysuckle, florals, apple juice left on the counter and subsequently very biscuity and sweet corn. Fresh mouthpuckering lemony acidity with lots of minerality . Chalky texture. Somewhat waxy . More lemon zest. At the moment, the nose and the palate doesnt quite seem to match. Needs time?

This is a good full wine with a very nice bee's wax component. It's long, round, beautifully textured with gobs of tropical fruit, but there's too much oak. Will the oak recede in time? I doubt it. I've got one more bottle and will hold to see.

Had one last year in June. Let's try it again. Ripe butter melon notes emerge, fine, delicate, typical Pessac.. The palate is lovely, salty even with a nice melony mineral undertone. Great wine....too bad this was the last one :-(

Dinner @ Christiansholm (Christiansholm): actually got this one blind, proud was I - it is textbook white bordeaux, one should drink more of that stuff. The wine was domintated by sauvignon blanc, but with a creamy backbone of the semillon - and wonderfully open and ready for business (they can be difficult young).

Decanted for a bit before tasting because it was quite closed at first nosing. An intense old wine effect at first nosing, a little oxidated at first, then ripe butter melon notes emerge. The palate is lovely, salty even with a nice melony mineral undertone. Great wine....but has to be drunk NOW.
