A lovely, consistent vintage champagne that does not disappoint. The bubbles and fence is lovely of green apples and Meyer lemon palate with balanced fruit and acidity.

Decadent. Honey, fresh citrus fruits, Danish, grain, basil, mint, candied lemon peel. Keeps evolving. Fresh, yet dense mouthfeel, with baked citrus and mint to the fore. Soft mousse. Stylistically very distant from my favorite regular vintage champagne (Taittinger), but it works very well. Long and intense. Drink now - 2032, but why wait? One for hedonists...

Preferred this 2014 over the 2012, especially when stored overnight with a stopper in the bottle and kept in a 3C house refrigerator.
This vintage is a Pinot Noir (55%), Chardonnay (45%) blend. Made from 19 crus of which 87% are Grands & Premiers crus. Dosage : Brut (7g/L).
Quite linear but with juicy acidity last night when first opened at the Mascot wine dinner (Where Chef Keith Hooker's incredible and restrained cooking techniques entertained and fed us so well all night), but here's the experience after taking a half bottle home overnight!
Brioche and bread notes and such depth and density,and a nice 30s finish!
👃 Lemon zest on the day this was popped, but after 3 hours of bottle breathing time.. First hints of brioche and toasted bread was detected, Joe Yee Wong
🌙 Overnight, so much more apparent, beautiful brioche nose and the depth on the palate was all there.
😛 Green apples, a nice weight and what can only be described as biscuit-like and baked brioche! Wonderful.
⏳️ Best of all.. the finish went on and on, maybe even over 30 seconds!

Brioche, yeast, green apples, lemon, honeysuckle and minerals on the nose. Very fresh in the mouth with good balanced acidity. Gentle finish. Very good champagne. Will probably be even better with a few more years storage.

On a Singapore Airlines flight from New York to Frankfurt. Medium straw golden colour. Apple-driven, with smoky minerality. Good autolysis character of bread crust, nuts, biscuit, and brioche, with creamy mousse and very good length. Seems to be an early maturing vintage of Piper-Heidsieck. Very enjoyable, but not on the same level as the lovely 2012.

Tight and robust with green apple, pear and baked bread. Light golden color with vibrant moose. Great finish with tight laser sharp acidity. Round and full. Drink now- 2020.

palate: old apple, almond, brioche,
푹 익은 사과의 향, 굽는 빵 향. 파이퍼 하이직 특유의 고소한 맛이 훨씬 더 강하고 좋다. 끝에 약간의 자몽과 복숭아 향도 뒤따른다. 매우 만족한 샴페인!
다만 버블의 지속력이 조금 약한 듯하다.

환원향이 조금은 났지만 여전히 신맛이 지배하는 팔렛
12빈티지에 비해 싱겁니 어쩌니 하는 말이 많았지만 역시는 역시나다.
파이퍼하이직 빈티지는 참 좋다.
두고 마시면 더 좋아질 파이퍼하이직2014빈티지
7만원대 가격에 이정도 퍼포먼스라면 아주 땡큐지~~!
