This is now at peak. Really delicious Chablis that is well balanced. Floral nose, hints of seashells and chalk. Oak is fully integrated but adds a bit of flintiness. Silky, nice acidity but no sharp angles. At a very good place right now.

Drinking at the absolute top og its game. The nose has some smoky mineral and citrus with a hint of toast and white mushroom development. In the mouth it is direct, powerful and linear. There's a spine of grapefruit and plenty of salinity. It has great drive and cut and is classic Valmur in every sense.

Full body, pale yellow color, aromatic, lemon and apples aroma, fresh lemon, peach, apples, and minerals on the palate, lemon and minerals on finish, extraordinary long finish, very fresh and powerful, balanced and complex, amazing combination of freshness and minerality, saturated and elegant, lovely acidity, food friendly, excellent Chablis. Well associated to see food (clams, shrimps …) and grilled fish. Serve 12º - 14º. At peak now, drink now and next four years.

A touch of struck match sulphur on the nose and plenty of oyster shell action but essentially this dense, chalky, linear Chablis has gone nighty nights.

Pure, focussed and delineated this is Grand Cru Chablis at the top end of town. There's plenty of river rock, iodine, salt action along with some bright and breezy citrus fruits. It is intense and powerful with a thin skin of glycerol protecting one's gums from all of the sharp geological matter just below the surface. All flavors meet at a singular minerally point and then fan out on the finish.

Hands down the most complex and accessible 07 Chablis I’ve met yet. The aroma is a composition of gunflint, fennel, peach, candied pear and some oak derived spice. It is rich and textured in the mouth without the usual Valmur line that one would expect in a Raveneau or Fevre version. It finishes with a rush of minerals and there’s terrific drive and persistence.

Chalk and sea shells on the nose. Huge acidity and a savory finish. Very good stuff, beginning its drinking window.

Young and angular. Notes of lemongrass and flint, tightly structured. Needs 3-5 years.

Slightly oxidized. Nice mixture of fruity and mineral nose initially but died off rather quickly.
