Retail $28 (750ml). 100% Palomino Fino. From 375ml. I should have learned from my mistake last year--I once again tasted this after Harveys Bristol Cream and it once again took a while to adjust to the lack of sweetness, but once I did, I again found this delightful: amber color in the glass with notes of salted caramel, freshly ground coffee, and orange rind. The palate is dry, but rich, with a decided oxidative note and plenty of that coffee/orange combo. Comes off as a tad hot on the finish.
Darker amber than I expected, looks like a sherried Scotch. 100 % PF here. Very dry and almost a tad tannic. Almonds, walnuts, and dried fruits. Not a shy beverage. Makes itself known. Good, but I much preferred the amontillado.

It's a beautiful translucent amber color with walnut, toffee, dried fig, red apple skin, old oak, leather, subtle warm spice and orange marmalade aromas. On the palate it's medium-bodied and dry with a very appealing oily texture, tangy acidity, and subtly tannic. It shows dried fig, baked apple, dried peach, toasted nuts, orange marmalade, lemon peel, a hint of vanilla flavors and something vaguely herbal that reminds me of amaro. Retail $28. 100% Palomino Fino. I can count on one hand, perhaps, the number of Dry Sherries I have tried (OK, maybe two hands). Following Harveys Bristol Cream, this came off as a bit austere. Sure, I was also watching John Oliver, so that affected my mood. Amber color in the glass with loads of nutty (walnut) aromas, oxidized raisins, and a decided smoky element. The palate is rather austere, and delicious. Nutty, fruity, oaky, almost completely dry. What should I do with this Sherry? Charcuterie, cheeses, grilled meats. Oh yeah.
Medium amber colour. Smell has pickled orange peel, jammed fig, dried apricot and raisins. Also some cinnamon. Lots of raisins and hazelnut in the taste, accompanied by other dried fruit, such as apricot, pear, and fig. Undernotes of orange peel, cinnamon vanilla Dry, highish acidity. Very good oloroso.

Pretty pleasant, but this was quite a few steps behind the 12 year Palo Cortado. Altogether lighter and less compelling I thought. The nose was attractive enough, with drifts of dried fruit, roasted nuts and dried lime and lemon peels, with a little drift of chrysanthemum tea with honey at the sides. The palate was lighter and less complex than the Palo Cortado as well, with bright citrus acidity running through notes of dried lemons and figs running into a finish kissed with a little hint of spice and mineral. Good length there, and a decent bit of balance and intensity, so that this was a solid bang for its buck. Altogether though, this was decent rather than really good.

I loved it at the table in Andalusia, and I love it back home in NYC too. Parmesan cheese rind, soy sauce, dried fig, smoky ketchup & American oak. So great with thin slices of salted, browned meats. But it can pair to so much more than that. I find it so drinkable—like the amontilllado. It makes me so happy that even this giant level of sherry production yields something I really like. (But not the Tio Pepe fino. I find that too purple grapey, quite unlike any other fino I’ve tasted.)

We're in mass production territory here so don't expect any fireworks. Nevertheless it's an honest Oloroso with decent complexity: hazelnuts, caramel, toasted coffee, dried apricot. Completely dry, good acidity and very good length.

It's dry in the mouth with a low acidity, medium alcohol, full body and pronounced intensity flavours of caramel, coffe, toasted almonds and prunes. Medium+ finish.
It's a very good quality wine with a decent complexity, showing typicity and with a good finish, but it could be even more complex. Drink now, there is no point in ageing it since it is already fully developed.

Clear, medium amber with a clean, pronounced nose of cinnamon, brown sugar, sultana, almond extract, candied pear, and dried apricots. The palate reveals a dry sherry with medium acidity and a medium body. Flavors of creamy vanilla, toffee, almonds, and a fig reduction sauce carry through on the medium body and medium-plus finish. I guess we are way out of line with everyone elase here, but a friend and I tasted this after our "critic’s comparison" tasting on 10/8/11. It had a wonderfully appealing bouquet of toffee, roasted nuts, vanilla and salty ocean air. The palate was smooth, balanced and delicious with flavors of caramel, toffee, roasted nuts, vanilla and minerals. My friend scored it 93+

Having tapas in Seville with Annick, Casa Román, Santa Cruz distrit. It is strange than even in the south of Spain, in a traditional meal house (famous for its spanish cured ham), there is the only oloroso seco you can order there (try to drink it a bit cold cause you are in Seville 20 C afternoon even in February). Served by the glass. Nice transparent ambar colour. Dry but tasty and persistent. Simple but nut full-flavored. Yeah, you can say "an everyday dry oloroso" but is oloroso an everyday wine? Do not think so, sorry.
Tomando tapas en Casa Román, barrio de Santa Cruz - Sevilla. Es curioso que incluso en el sur de España, en una casa famosa por sus raciones de jamón, este sea el único oloroso que puedes pedir (se recomienda un poco fresquito por las altas temperaturas sevillanas). Bonito color ambar transparente. Seco pero sabroso y persistente en boca. Sin complejidades pero lleno de olores a frutos secos (nueces). Sí, podrías calificarlo de "un oloroso para todos los días", pero la cuestión es saber si el oloroso es realmente un vino para cada día. No lo creo, lo siento.

With Marieliz matching some tapas in Seville. If you were looking for complexity, please knock next door cause this oloroso is very simple. In spite of it, good aroma and a bit oaky and full of nuts flavours. Not so bad for oloroso novices but my determined recommendation is to try something with more shades.

Georgeous light carmel color brilliant clear with hints of gold that flash as you swirl it in the glass. Carmel, wood, salt air, Raw nutmeg, light roasted nut notes and all supported by a light vanilla underlayer. Light and heavey in the mouth at the same time if possible, the flavors are ethereal with a rich salty, wood laden body that lingers in the mouth. Strong flavors of carmel, salt, citrus, light wood notes, light toffee and more and more. This is my first Seco Oloroso so I won’t rate it but if this is even a decent at best example of the style than I need to buy more of this. Similar to a Fino in that the rich salt quality is there and lingers, but more hefty than the delicate almost feminine nature of the Fino. Both offer so much and in such surprisingly different ways.
The Oloroso is a dry play on the basic elements that make up wine. So much so that I even taste a slight tannin on the mid-palate. But like a chef would a soup, the mire-poix of acid, tannin, fruit, is then sprinkled with a dash of salt air so as to bring alive the sleeping flavors. Too bad so many of us associate sherry with grandma and the sweet wine she drank, unbalanced and heavey, when before us is a treasure trove just waiting to be discovered. I can’t wait to explore further this family of wine and all of it’s manisfitations, hopefully learning what else is out there to stimulate the mind and palate.

It had a wonderfully appealing bouquet of toffee, roasted nuts, vanilla and salty ocean air. The palate was smooth, balanced and delicious with flavors of caramel, toffee, roasted nuts, vanilla and minerals. My friend scored it 93+

WSET Intermediate Course, Session 5 Tastings (Washington Wine Academy, Arlington, VA): Appearance: clear, medium intensity, amber. Nose: clean, medium intensity, nuttiness, caramel, butterscotch. Palate: dry, low-medium acidity, medium body, roasted nuts, salt, maple syrup, caramel, woodiness, medium-plus length/finish. Conclusion: good (again, another solid expression of the style).

Dry, medium bodied and balanced by a mid-level acidity. Citrusses, minerality and some nutty toastiness. Good lenght.

Tomando tapas en Casa Román, barrio de Santa Cruz - Sevilla. Es curioso que incluso en el sur de España, en una casa famosa por sus raciones de jamón, este sea el único oloroso que puedes pedir (se recomienda un poco fresquito por las altas temperaturas sevillanas). Bonito color ambar transparente. Seco pero sabroso y persistente en boca. Sin complejidades pero lleno de olores a frutos secos (nueces). Sí, podrías calificarlo de "un oloroso para todos los días", pero la cuestión es saber si el oloroso es realmente un vino para cada día. No lo creo, lo siento.

Medium gold color. Nose of caramel and dates with a slight whiff of roast nuts. On the palate it is dry with medium body and modest pungency. Quite nice for an everyday dry Oloroso.

Con Marieliz tomando tapas por Sevilla. Si buscas complejidad, sáltate este porque se trata de un oloroso bastante simple. A pesar de ello, se aprecia un buen aroma y el ser un poco amaderado lo que le proporciona olores a nueces. No está tan mal para principiantes en este tipo de vinos pero mi encarecida recomendación es que después se pruebe algo con más matices.

Georgeous light carmel color brilliant clear with hints of gold that flash as you swirl it in the glass. Carmel, wood, salt air, Raw nutmeg, light roasted nut notes and all supported by a light vanilla underlayer. Light and heavey in the mouth at the same time if possible, the flavors are ethereal with a rich salty, wood laden body that lingers in the mouth. Strong flavors of carmel, salt, citrus, light wood notes, light toffee and more and more. This is my first Seco Oloroso so I won’t rate it but if this is even a decent at best example of the style than I need to buy more of this. Similar to a Fino in that the rich salt quality is there and lingers, but more hefty than the delicate almost feminine nature of the Fino. Both offer so much and in such surprisingly different ways.
The Oloroso is a dry play on the basic elements that make up wine. So much so that I even taste a slight tannin on the mid-palate. But like a chef would a soup, the mire-poix of acid, tannin, fruit, is then sprinkled with a dash of salt air so as to bring alive the sleeping flavors. Too bad so many of us associate sherry with grandma and the sweet wine she drank, unbalanced and heavey, when before us is a treasure trove just waiting to be discovered. I can’t wait to explore further this family of wine and all of it’s manisfitations, hopefully learning what else is out there to stimulate the mind and palate.
