Everything is perfectly aligned for a promising future! With an excellent vintage, fruit, tannins, and acidity all in harmony, the only thing missing is a time machine to beam me away to 2029 😂!

The Solera Extra Brut 1er Cru 2017 from R. Pouillon is definitely not your everyday Champagne. At first, the wine is quite closed with aromas of citrus fruits, green apple notes and hints of stone fruit. The wine definitely needs time to develop its full complexity. On the second day, the wine is much more complex, with hints of smoke, stone fruit, bruised apple and a beautiful decent oxidation. A champagne that will appeal to the palate of sherry or orange wine lovers. The very elegant and soft perlage is a real treat for the palate. The acidity is on the lower end for my taste, which can be balanced out by serving it slightly chilled - the downside is that you lose complexity on the nose.
I paired it with on day one with cotoletta alla milanese and on day two with perch from Lake Zurich. Although I’m a big fan of champagne x schnitzel, I have to admit that in this case I preferred the second pairing. For schnitzel, I look for less complexity and more acidity. All in all, a nice champagne! Santé!
