Epic Bordeaux for an Epic Birthday!; 9/1/2021-9/12/2021 (Paris & Bordeaux): This is drinking like a 70's or 80's champagne and in that sense it's really good. There's definite oxidation and the bubbles are much more muted but it's nutty and interesting and a hint of freshness to it. This is a producer I've really liked in the 90's and perhaps it is because they get to that aging just a bit faster and I like the taste of aged champagne. Not sure it was a perfect bottle but it was drinking incredibly well.

Light to mid gold with persistent delicate bubbles, ripe apple and hints of orange peel, brown bread and a lovely note of caramel/butterscotch; fully mature and a perfect time to drink it, surely a great effort for the vintage but equally lacking the presence of better years ****(+)

Mature Champage: Tasted blind: Initially the nose had quite green notes and was very earthy. After 30minutes in the glass it started to open and develop nice apple and bread notes. Overall this CdC 94 has plenty of power, a great length and is complex. At the moment just a bit dominated by acidity. Give this wine a good size glass (whitewine glass) and let it breathe for 30min as it kept on developing in the glass. At the end there were wonderful Caramel notes...Drink now - 2022.
