A super bottle on a sunny Friday evening, for Joy's birthday. Lots of bread dough on the nose, and some zesty flashes here and there. More exciting when drunk: it's a delicious wine and beautifully evolved, like wallowing in a giant vanilla cloud. Some elderflower and blood orange, too, and then an extremely long, politely insistent finish. Quintessential fine BdB.

Just magnificent, a champagne with a personality different from any other I’ve had. New oak barrels for a few percent of the wine, 8-10 years on lees and meticulous selection and pressing has made this into something quite unique.
Color in between lemon and gold. The nose has developed beautifully with pronounced aromas of toasted hazelnuts, caramel, cream, even toasted malt, and apple tart and slight touch of ginger and honey. Tiny bubbles, some fizz left but if I’d had more bottles left I wouldn’t let then sit much longer. Mature, but fresh and with tension. Full-bodied and quite majestic. I’d say this is around it’s peak. Can lau down for more years, but may become a bit flat withe several more years.

Dinner with the wine group - Champagne and Sushi (Shoshin Sushi): Light golden, excellent bead, youthful color; aromatic, yeasty and brioche, still very fresh; palate is medium bodied, fresh but also rich, exceptional balance; long finish. Top tier champagne, exactly what I expect from Taittinger. 93-94 Day 2: Lacking a bit of the magic of the first day. Still good, but not as amazing.

Very pale, superb mousse of pin point bubbles, energetic. At least several years from peaking; it’s too coiled and lemony just now. Promising though.
