Very pale coral color with good fine bubbles. Nose with very light fruit and hints of bitterness. Light to medium bodied with white peach flavors, again with a touch of bitterness on the very dry finish. Refreshing and a good aperitif of the palate scraping variety. Grapes are listed as macabeo, xarel-lo, parellada, and monastrell.

This is a cava made with the traditional blend of X-M-P with a minimal addition of Monastrell, a red grape, this addition provides a beautiful salmon colored sparkling. This is very refined cava that, bubbles are minuscule, the nose has yeast and strawberry, the palate shows classic cava profile with more structure given by the Monastrell. This pairs nicely with pâté, charcuterie, and a two way asparagus with romesco sauces recipe from Jose Andres, salud!
