austere, classic, stony, remarkably persistent bubbles. wouldn't be able to tell it's rose if tasting blind, behaves just like a traditional cava to me. 89-90

Clean and subtly tart, with mid intensity of flavor and decent length on the finish. Light toast, strawberry, maybe some apple. Balanced, with touch of complexity, it does Cava a solid.

At Enoterra, after the Shades of Rose tasting and with the dinner. it had a light pink color but good fruit flavors -- strawberry, citrus -- lots of minerality and very fine bubbles with loads of finesse. Really a lovely drink.
This was recommended by sommelier Nicolas with the Shades of Rose dinner (scallop sausage, house fennel sausage, crispy skin orata (fish), pasta with house fennel sausage, rock potatoes and salsa verde and other side-dishes: shishito peppers, roasted baby carrots, and sauteed kale). It paired best with the house fennel sausage -- alone or in the pasta -- and with the rock potatoes. Pretty good with the scallop sausage -- which brought out the citrus notes -- and not bad with the meatier parts of the orata.
Good value for $54 on the menu. Even better value for $22 at a wine store.

Loved this sparkling which had an incredible light pink color and citrus nose, which wasn't overpowering when paired with seafood - roe and tuna sashimi.
