2004 Vintage Burgundy Tasting and Oxidation Check (Part 1) (BLT Fish, New York City): Initially fat, heavy, broad and unfocused compared to the other sound wines in this flight and, alongside the Fontaine-Gagnard (or, for that matter, many other Caillerets I’ve had recently from various producers and vintages), not especially typical. Improved balance, freshness and firmness with air, and would probably have seemed strong enough if not served next to the Leflaive and F-G. Curiously, I found this producer’s ’05 Caillerets (tasted 2/11) better and less ponderous than tonight’s ’04. I might give our sample the benefit of the doubt, but I can’t forget that J-M Pillot’s 2000 Caillerets, amazing in its youth, has been uniformly poxed to the gills for the last several years. Is this vintage also at risk?

Nice nose of lemon chiffon and sweet corn. Creamy fruit with flavors of buttered popcorn and lemon. Lighter-bodied and finishes with a juicy spiciness on the tip of the tongue with notes of chalky minerals. A good wine but it's not aging as well as I would've hoped. 88

Pulled cork and pour. If I had this blind, I'd never guess CdB white, as it shows soft edges, a fatter texture and very little acidity. Kind of like orange blossom honey, as I think about it. Nothing wrong with it but it's got very little cut in it, other than some light mineral on the finish. I am going to chill it up a bit more, let it air and serve over appetizer, as there's no reason to hang onto this bottle with more age if you have it.
