Rockss and Fruit

(Edmond Vatan Sancerre "Clos de Neore") This was extraordinary. Took over a day to come around but when it did it turned into one of the most remarkable Sauvignon Blancs I have ever had . . if you could call it that. This has less to do with Sauvignon Blanc than any I have ever had. Nose starts out with jasmine, mint, some citrus fruits and wafting minerality. Just a mineral stank! The palate is creamy . . . but that is decieving as the acidity is lurking underneath but beautifully knit throughout the wine. The 2nd day the nose just exploded and was truly something. More exotic/potpourri spices along with just a pristine scent of lavender and jasmine. The palate was firm with strong acids but wonderful fruit and minerals. This wine just exploded with power on the second day and had all the lime candy gumminess mixed with focused acidity you could want.
