D3 DipWSET STILL WINES - Prep with Lauren and Mike (Mike's Place): A: Deep ruby N: Medium (+) nose of smoke, plum, prune, black cherry, lavender, clove, eucalyptus I thought but it was green bell pepper,, Mike got earth, I got a bit of cedar P: Dry, medium (+) acid, medium (+) silky tannins, high alcohol , full body, medium (+) intensity, and medium (+) finish C: The heavy cooked fruit here is made less cloying by the balance of medium (+) acidity,. There is complexity here and a fine finish and concentration. Its a very good quality wine which would be better if it had a longer finish and or a more pronounced intensity, Suitable for ageing.
Guesses: It was an Aussie shiraz but confused by the absence of black pepper
Mistakes: The herbaceous aromas were very apparent. Had a moved those to the capsicum category, I would have guessed the grape. Its a lovely example of a Coonawara cab. Maybe there was green bell pepper and a touch of eucalyptus here.

This wine is holding up extremely well. Well-balanced, with classic cab flavors of cassis, blackberry, black cherry and a hint of green early on. The tannins are soft and supple, but wine has good weight and acidity for structure. A true delight which got better after 10-15 minutes in glass.

Still good purple - bright. Nose of vine leaves, mint and eucalyptus, cassis and blackberry. Bright fruit, maybe a little confected; pepper on the back of the nose; but maybe also some bleach! Soft, juicy black fruits; very pure fruit. A little blueberry, with some peppermint on the finish. Not much tannin left. A nice, soft, juicy finish

(Jim Barry Cabernet Sauvignon The Cover Drive) Dark ruby color; lifted, tart red currant, green olive nose; tight, tart red currant, olive palate with medium acidity, reminiscent of a ripe Chinon; could use 2 years; medium-plus finish (14.1% alcohol)
