A lot of toast and ash but improved with air time, quite green, nice silky mouthfeel. Some red fruit. Drinking it with food balanced the strong ash notes and was enjoyable. It is in a strange place and would hold off opening another bottle. Had a very similar experience with a 2011 Bachelet.

A really spicy nose of dried flowers, pine needle sap, Sichuan pepper and aniseed. There is pure cherry fruit and a fine and silky mouthfeel. It builds through the palate, finishing with mineral cut and fanning out. Delicious.

Red cherry aromas with dried flowers and dried thyme comes across with some power. Similar flavors with some tart cranberry, and an overall firm/ lean character with moderate length and some rough edges on the finish. Whole cluster spice is clear but stays in the background. Probably better in another few years, but not a wine to cellar long-term.

Always a floral wine from Dujac and even more so in 2011 with a bouquet of dried and fresh flowers invading one’s nostrils. There’s a touch of spice and sandalwood as well and wonderfully crisp cherry fruit. There’s a suggestion of Goji berry in the mouth (there is not really, I was at fermentAsian eating a quail dish that had Goji berries in it at the time of consuming this bott and wanted to work this berry into my tasting note) and the wine has terrific underlying minerality. It is silky yet compact and finishes with a little cherry skin grip.
