A private lunch (Restaurant Vuurtoreneiland, Amsterdam, NL): Medium white golden colour with green and yellow reflections; very expressive nose, excellent Chablis typicity, sea shells, salted butter, flowers and lemons, fragrant, good depth; generous palate, juicy and fresh, more apple than lemon, mature but lively; very good flavour intensity and length. Drink soonish.

A business dinner (Restaurant Choux, Amsterdam, NL): An excellent 2011, has aged very well, retains its citrus and stone fruit and displays a lovely balance between firm acidity and salted butter richness, convincing finish.

Marvelously rich and fresh at the same time, has a dark golden hue, betraying ripe fruit, not so much oak on the nose, as there's a fat body, that may be the result of ripe fruit and/or some battonage and possibly deft oak treatment. Loved it though. The citrusy freshness carries this such a long ways. We just drank this with some truffle flavored potato chips.
