  Two hands top wine : Ares Year 2004 . 15% alcohol; deep dark fruit color , chocolate orange on the palate. earth and spice nose ; marvelous finish . Many years ahead for drinking window .pairing with delicious wagyu beef fillet , Shitaki mushrooms and vegetables.

  1 hour decant.
  Great colour. No significantl bricking. Tight on the nose. A bit of brine, oyster shell, some beetroot and earthy notes. Just a touch of baked bread. Maritime influence?
  On the palate, chocolate orange. Bright attack of acidity. Sour cherry, yellow plums, greengage, fresh orange juice. A touch of spice and tannin, but mainly acidity to keep the fruit in check.
  Very young!!! None of the big fruit or regional diesel about it.
  One of the more sophisticated two hands top wines I have had. Not at all overblown or fruit bomby. Plenty of life left in it.
  Definitely a food wine. Well balanced, and set up beautifully for food with a bit of grease.
  After 2 hours, tannins start to emerge - very fine, and really nicely integrated. Brilliantly balanced.
  Not much more Evolution over the following couple of hours.

  PnP. The deep dark blue fruit has taken a back seat to a spicy and still tannic wine that at 15 years still shows as bold but in a completely different way.
