  • Super bowl Sunday baby!
    Nose: black cherry, crushed gravel, hint of tar, sweet baking spices and a strong graphite. Very nice

    Milky body coats the palate nicely, incredibly smooth, lighter soft tannins, and a nice dry cedar finish with some blackness to it: dark chocolate, black tea. Cherry really sticks out with some graphite.

  • I have been excited to try this because they age 1/4 of the wine in terra cotta and I don’t think I have tried a wine like that before. Deep ruby with pale edges, a noticeable redness as well. The nose has a sweet quality of baking spices, white pepper, dark fruit & a little cherry, and some mineral elements like maybe graphite. It has a bit of a lighter body and reveals itself much faster than most napa cabs (not that that is a bad thing). The tannin structure is on the lighter side (not weak) and balanced really well with strong acidity. The finish lasts for several seconds and maybe isn’t as layered as other Napa cabs but I like variety and it is not closed, just maybe not complex with several layers, cocoa definitely sticks out. It is still a bit layered and it is easier to enjoy each because it’s not so overwhelming. I honestly don’t get extremely distinctive flavors, but once again that is not a bad thing, for instance when compared to young mountain fruit (this is Calistoga) simplicity can be endearing. I don’t mean to say this lacks flavor or character, maybe I’m just not picking up on the nuance; but this is very well balanced and blended which is maybe holding back the distinctive traits. It is much more balanced in terms of fruit quality, there is a lot of earthiness and it isn’t so fruit driven. The fruit also has a more mature or ripe quality, I really like the wine and I’m gonna shut up now. Drinking well now, I’m sure it will benefit from age still, it definitely doesn’t need it though.

  • Great acid and balanced with lighter tannins. More earthy than many cabs and with great structure. The acid begged for food and chocolate cake really fit the bill for me.

  • Fourth stop on our ninth day in Napa Valley is at Perliss Vineyards in Calistoga where we tasted a few vintages of the Perliss The Ravens by Aaron Pott and Anthony Perliss as well as a couple wines from Wingspan Wines by Aaron Pott and Tessa Perliss. Thank you again for having us out at your estate. It was devistating to see the damage from the latest fires running through here. Sixth wine up and third in a four year vertical was the 2014 The Ravens Cabernet Sauvignon from Perliss Estate. This is made up of 100% Cabernet Sauvignon from the Perliss Estate Vineyard in Calistoga. This is aged for a total of 20 months in 75% new French oak barrels and 25% terra-cotta amphoras.

    Dark purple in appearance. Elegant nose with lush purple flowers, dark berries and some spices. Medium plus tannins (7/10) with a medium plus to full body. Layered and elegant palate with cinnamon and dried berries. Dry and very long finish. Drink till 2031. (91+)
