Bottle is Ribolla Gialla Brda made by Ales Kristancic in Slovenia. Biodynamic vineyards with almost nothing added - slight SO2. Opened for an hour. Light amber. Still reticent aromas of apples, unripe pears, hint of citrus and nuts. Citrus, granny smith apples, a bit nutty, pine resin, green pine flavors in a good way, leading to a long finish with a blend of green apples, a bit of nuts, and sea air saltiness. Long finish. Nice acids. A bit of heat at end (but the wine is now at room temp - not noticeable when it was colder). Really good and just so freakin' interesting. Went incredibly well with pan roasted cod w/oyster mushrooms over saffron risotto and rainbow chard w/chardonnay soaked currants.
