Now for something completely different - but not bad. Start somewhere between Chinese Black Vinegar and Dr. Pepper and bring it toward an earthy, farmy, red-fruit Pinot. Smooth once tannins settle - you need to let it breath a little but not too much. Consider it a novelty wine.
