A nice bottle with alot of subtleties when looking. I am not a big burgundy guy at this point but overall enjoyed this. I wouldvsay drink or hold but the hold may not yield a better wine for my pallette but i sense i could last another year or two at thus level.

Coravin pour to accompany salmon. There's definitely some funk on the nose, but also cherry fruit, some char, and a bit of forest floor. Medium bodied, this took time to open up. Solid core, it tastes darker than it smells. Little tannin, moderate acidity. It finishes nicely without any bite. It's the kind of wine that doesn't wow me yet leaves me with a great impression. I think it's ready, but my aged burgundy experience is limited.

The Servoisine '05 tonight shows first stages of maturity, with a solid ruby hue and attractive (not to say downright sexy) development of the toasty oak aromas. On the other hand it still has impressive integrity of fruit (kind of raspberry-black cherry), a good firm structure that unties itself fairly quickly with air, and a healthy level of buffered acidity. Highly enjoyable to drink now, it should cruise safely for another ten. (initial note 07-07-06)
