Batard closing month dinner. Paired w 4 French cheeses, epoisses being the absolute highlight.
Tasted like Heavily salted honey covered almond/walnuts. W the epoisses, accentuates nuttiness of both in a spectacular way that brings forward a new extremely clean toasty nut flavor absent when tasted separately. Might be the most interesting pairing I’ve experienced.

I have always loved old Filhot from great vintages. its a little underrated compared to Climens and Dqyuem from time to time. this 83 from my cellar was in great condition, wonder full golden orange consistent with age. It was given wine of the night by a few punters and it was certainly well up there for me. it bounced out of the glass with honeyed apricots, oranges and marmalade. but the true magic trick was the underlying structural acid and body that meant it was not over ripe, over the hill or cloying. it was fresh bright rich and sweet and matched perfectly with Creme Brulee and Cheese platter. an absolute stunner and a bargain at the auction scenes if you can find good bottles. And like the 80 Dyquem from the last soiree i managed to squirrel some to take home but this time i held onto the bottle to ensure certain family members didn't get a straw and consume the rest. so i had a little sip in the back seat of the Uber but handed the bottle to the others to assist in getting my seat belt on. which once achieved i realised was a total ruse by the Timmy two shoes and Mark w to distract me. i took possession of the bottle back again and as typical and fully expected it was empty. So i exited the Uber at Timmys and threw the bottle into Timmy garden in protest. I wish certain pruning opportunities of the family tree were available from time to time

Près de 7 ans après ma dernière bouteille. Bas du goulot, bouchon friable, a cassé. Belle couleur ambre, arômes de coings, de poires, de safran. La bouche est douce sans être fatigante, on y trouve les oranges amères en abondance, presque un peu trop à mon goût, finale un peu amère. Bel effort toutefois.

Barley sugar colour, barley sugar nose, barley sugar flavour. Fully mature Sauternes, folding well but no further upside. Excellent.
