Only a short decant to remove sediment, initially a bit lean but filled out nicely within the hour. Nose of cedar some star anise with red/black fruits, lovely soft blackcurrant fruit fading to red, fine powdery tannins - good weight with spice and good acid and quality but unobtrusive oak keeping everything in check - a real class act and a big step up from the normal cab - would say this is still building - very good

Ripe and sweet toned blackcurrant dominating the palate, with pan juices and olive bringing up the rear. Gritty tannins still play a part, though they have softened to a point where they don’t stand out. Acid feels a little adjusted, though in good balance with the wine now. Good length.
In a very good place now. The vibrant fruit and remaining tannin will keep this going for another decade. However, it might not get better from here.

Colour Impenetrable inky Black purple edges , really quite amazing for 15 yo wine showing no colour change , under cork 15/15 Nose intense black fruits , black currant, olive , chocolate, liquorice, cigar box, hint of mint, 28/30 Palate full bodied , rich , youthful, complex wine , flavours followed on from the nose , I put it at 10yo , almost multi regional such was the balance and complexity 42/44 Overall served blind I thought this was McLaren Vale due to chocolate and velvety richness , the classic Coonawarra mint was so subtle I missed it but it was there . Once again it shows that Coonawarra Cabernet needs at least 10 years bottle age 10/11

Cork, 14.5% alc. Mid red, tending to salmon at the rim.
Blackcurrant, olive, crushed autumn leaves, mint, star anise. Milk chocolate. Smelling quite youthful!

Cork, 14.5% alc. Still exhibiting a deep, dark colour, but more in the red spectrum rather than purple.
Mint, dark chocolate, cassis, cherry, vanilla, and dusty cedar chest on the nose. Pretty classical, really.
Sweet fruited, with a minor earthiness starting to emerge. Smoky deli meat after a few days open, as well as some vanilla. Lovely dusty tannins.
Opinion: Lovely wine, with a decade left, at least. Hold.
