  • I wasn’t sure I liked this wine at first. I tried it at a tasting and wasn’t sure what to make of it. It’s highly tannic and just slaps you in the face. You taste some dried cherries and dark fruit but wow what is this this wine? Clearly this wine needed food. But I took a chance and brought a bottle home with me. So I after I opened the bottle I put it back in the fridge and took a taste for three nites in a row. By the third nite I served it with a rich spaghetti sauce and it was great. Yes the tannins were there but softer. The dried sour cherries, and raspberries now included spice and woody notes. The flavors seemed more integrated. Very interesting wine but not for the faint hearted.
