I served this in my wine course. Citrus nose with a touch of grass and plenty of flinty minerality. Medium weight. Good acidity with some tropical and the usual gooseberry in the finish.

Pale, light gold in color. Full, forward & fragrant nose of ripe fruit aromas of lemons/limes, apples & gooseberries with overtones of floral & mineral notes, stony/flinty, chalky, herbs & a hint of grassiness in the background. Light bodied with a very good concentration of well balanced & smooth textured, vibrant, ripe fruit flavors of lemons/limes, apples & grapefruit with minerals & herbs. Lingering finish. Drinks quite well at present although it could develop further with additional aging.

with air and time this is opens up to show some steely minerality along with teeth shattering acidity (which I Like) - what keeps it all together is a very nice warm apple pie fruit, green melon, and white flowers. I haven't drunk sauv blanc in some time, and still will opt for a diff white, but this was decent and enjoyable
