  • Drinking well now. Quite smooth and well integrated flavors. The first glass showed a dominant candied cherry flavor and pleasing enough to have by itself. As the wine opened up more, it became a nice sweetness. This sweetness can make a pairing with food a little more difficult, but complemented a grilled pork loin with a sauce with chipotle and maple syrup nicely.

  • These wines are topped with a hard wax capsule. As per usual, I plunge the Rabbit corkscrew straight through capsule and cork and lever up. This time the cork split horizontally about 1" down from the capsule. The top and capsule were removed, but the remainder of the cork fell into the wine. A chop stick and a filtering funnel got the wine into a decanter.

    Third bottle, third different wine. Good rich fruit with some burnt notes. Slight mineral and saline. A feeling of a bit of oxidation. Medium finish, slight resin notes and some cleaner-growing fruit. Time resolved this into an acceptable wine, a bit flat but with a nice older fruit charm. I can't help feeling the cork had failed here.

  • Started as the lesser of the pair. Strong acidic notes, lean and austere with slight, but nice, vegetal notes. Good balance, earthy notes. Over time we got a nice expression of differing perceptions in wine vocabulary. I would say 'it gained complexity.' To Elena, there were 'fishy notes' that were off-putting, but 'a guy might like.' Definitely present were certain female notes and fleshiness. Better w/o food than with, but an interesting development in this wine.

  • Outstanding. Very slowly evolved over 3 hrs. Opened with slight berry nose and a distinct toffee note. Over time, good acidity developed and great fruit with notes of mushroom, leather and bourbon. Long smooth finish. Very complex and will evolve well over time.

    Paired: Spiced salt pork and lentils
