I opened two bottles of this wine within the past week. The first bottle was not right, showing a listless, tired palate, with almond paste notes rather than clear fruit. The second bottle was much better and confirmed that the first was an off bottle. Upon opening, brine and lemon palate, with a salty finish. The external angles of youth have smoothed out. Then, with air, the palate lengthens and shows apple and citrus fruit. There is good acidity, a tapered palate, good energy. Nice showing; much better than last week's bottle. This also re-affirms my long-held belief that Louis Michel's Chablis are not wines to age long term.

Don't make the mistake of drinking this too cold and anyone who sticks an icecube in it should be given Baby Duck next time. Let it sit outside of the fridge for about 15 minutes, or decant for 10. This Chablis is stony and vital, giving up its fruit after a pause in which the tongue is galvanized by the wine's minerality. Then the fruit seeps through: gooseberry and lemon, but subtle. Sharp, linear. My guess is it's not entirely ready, though. Wait a year to eighteen months.

A good one. Nicely mature, some oxidative character but not bad. Nutty and mineral. Butter too. 3.5
