I was wise, considering the age, and let it air for an hour or so. It was quite interesting, with a great deal of character, and even better the second night.

First sniff had me scared. A little dried cherry and some funk. Reminded me of an Italian wine past its prime. Smelled like a visit to Cassano's (our Italian deli) to buy a soppresata and kasseri sandwich, drizzled w/ olive oil and chunks of basil washed down with the house red and a nice cigar to finish. But, after a little air time, the sandwich and cigar were thrown into a mosh pit along with some blueberry, red currant, and cherry. Ahhhh, mo better with air. A little light mint and sweet red pepper poked their heads out at the end along with some cocoa dusted plum. Nice long finish of cherry still making me smile.

This was quite interesting. Not that dark in colour, with a garnet brick robe and brick orange rim. This is almost like a pinot - some barnyard on the nose, with quite sweet cherry, plum and cherry fruit. Medium to full bodied palate, dry and savoury but with sweet currant fruit, some tobacco and dried herbs. This was complex and pretty tasty. Probably about peak drinking, need to visit with most of my 2000 WA cabs I think.

Deep and complex cab. Aromas/flavors of tobacco, black cherry, currant, cedar and a note of game. Well balanced tannins and lingering finish.
