The main course consisted of chicken breasts in a mole sauce, and was accompanied by the 1993 Nuits-Saint-Georges Les Boudots from Gerard Mugneret . Exceptionally high fill for a wine of this age; cork in fine condition - stiff removal; dark colour, with remarkable purple ruby tones - defies its years, but it's been in my cellar since release; wonderful aromas of dark cherry, a little raspberry, which push well into the nostrils, together with an element of spiciness; pure and balanced on the palate; still some tannins, but they reside under the fruit - dark cherry and a little black raspberry; extends out to a very long finish. At a point of maturity now, but should last for years to come. A second bottle - consistent with the first - carried through the cheese tray.
