The recipe, and I quote, said "Dig out a dusty old bottle of Clos Vougeot, chill it lightly. Be careful not to shake the bottle unnecessarily or you'll make the wine nervous."
I didn't have a dusty old bottle of Clos Vougeot but this more than admirably did the job. Filling in at the mid palate, still very mineral on the back end. Coming around the bend. Perfect with Trout Marguery from Howard Mitcham's Creole Gumbo and All That Jazz.

Drank this over maybe 9 days (coravin) and it evolved slightly. This still needs some air on the first day, but by the end of the week was fully integrated and quite worthy. delicious.

The Pinot Noir (33%) brings elegance and finesse whilst Gamay Noir (66%) is brash and powerful on the nose, the combination of these two grapes yields a sleek and sinuous wine that pounces on you and doesn't let go for a long time. It had me jumping up and down and making various exclamations. Numms.
