 Tasted by thesternowl on 1/18/2024 & rated 92 points: 1997 Napa Valley Cabernet Sauvignon Retrospective (Omaha, NE): Presented single-blind; no formal notes. Wine #3 had great color and was charming on the nose. Developing, the fruit was beginning to show a slightly more desiccated profile. Relative to the others in the flight, this seems a bit more like a fastball right down the middle of the plate. I called Dunn Napa. A really nice wine that was just a little less interesting relative to the others in the flight. Drink now and through 2030. (1077 views)

More red fruit, tobacco and pepper on a mid+ weight palate. Good balance and very long peppery finish. Mouth filling. Still a bit of tannin, I think this will still improve. And yes the cork fell apart and had to be surgically extracted. (2202 views)
 Tasted by dbkitc on 4/16/2022 & rated 91 points: I’m enjoying this wine a good bit Beautiful garnet color. The nose bursts with cassis fruit that is slightly creamy. There is a bit of earthy elements but the pure fruit is prominent. Good weight on the palate with tobacco entering the equation on the finish. The red nature of the fruit leads a fine attack. Maybe falls off a bit quickly. Not complex. This certainly salutes Bordeaux but has some California sun to keep it real. I think the tobacco might take over if kept too much longer. I will drink the other bottle I have in the next year or two. Fine. (91) (2221 views)
 Tasted by buckeye76 on 3/16/2022 & rated 94 points: Still deep in color. Very nice nose of blackberries, black cherries, black raspberries, and blueberries along with licorice and chocolate. Rich, deep flavor, black currants, plums, and black cherries, and a touch of minerality. A big full bodied wine with nice complexity, very well balanced, and a long finish. Still performing well at 25 years old. While I'm not going to hold on to my remaining bottles for long, I am in no rush. Better now than our last bottle 10 years ago. (2275 views)
 Tasted by tomlee on 6/6/2021 & rated 96 points: Crimson in color with some bricking at the edge of the glass. 13% ABV. Ethereal nose of red fruits, graphite, cedar and cigar box. Definitely an old world feel to this wine. The concentration and power is notable. Plum, currants, leather and earth on the palate. Exceptional length on the finish with prominent, gritty tannins. Big, bold Cabernet Sauvignon that is still going strong at 24 years of age. I’ll check in on my last bottle when this turns 30 in 2027. (3080 views)
 Tasted by chablis28 on 5/30/2021 & rated 93 points: Acquired this in March (not on release). The fill was great but the cork brittle & dry. The wine was in pristine condition, yea!. Opened 4 hrs prior to diner and slow-oxed in Riedel BDX glasses & btl for 2-1/2hrs. Pretty open for business on opening. Just gave it a little extra air to coax out more aromatics. Semi opaque ruby garnet color with lightening rim. Enticing cigar box & cedar aromas. Lifted & focused flavors of; dark chocolate, blackberry, licorice along with tobacco leaf & herb echos. Really, a lot of the same character as the HM but, without the concentrated oomph of the HM. I always enjoy the Napa but the HM is the wine to covet & own. 13% alc. 93+ This is a Fender Champ amp to the HM's Fender's Twin Reverb. (3106 views)

 Tasted by Ibetian on 11/4/2018 & rated 93 points: Cork cracked on opening, use Durand for last bottle. Opened a few hours before dinner and poured a glass; decanted 30 minutes before dinner. Initial impression was plenty of black and some red fruit on the nose and palate. By dinner time more mature notes of mushroom had emerged. Some structure left, but silky mouthfeel, and ample fruit at 21 years. I’ll likely drink my second and final bottle soon, but if you thought this would be great in 5-10 years, you might be right. Beautiful Bordeaux complexity on the nose with cigar, forest floor, herbs. While I preferred the nose out of a standard cab or a stamp the flavors were more pronounced out of a sommelier stem. (4065 views)

Deep aromas of black fruit, graphite, tobacco, mushroom and anise. Suave tannins, still some good structure, and the fruit is mature but still pops. Mature but lively appearance; meaty nose, lovage, mature, good depth, cedary; mature and well-balanced palate, like a rich claret, very fresh, tobacco and gravel, could easily be from Saint-Julien; good length. Holds up well over a couple of hours in the open bottle. (4798 views)
 Tasted by Goldstone on 9/20/2016 & rated 93 points: Dinner with Daniel (BeefBar, Duddell St., Hong Kong): Decanted for two hours and then drank slowly over the next 3 hours alongside a Ch. de Fieuzal 1988. Wow, what a difference from when I last opened one in 2007...I'm pleased that I had the patience. Colour is opaque red-purple lightening to translucent at the edges and transparent on the meniscus. The nose is .....gosh!....lovely clean pencil lead, lifted tart and taut blackcurrant followed by very distinct lifted violets. Palate is....gosh!..... pure, linear and machine-ground in structure with multiple facets of violets, blackcurrant and blackberry, all somewhat austere but in an approachable way. What I sometimes think of as 'high cheek-boned'. Wow....a linear purity: fresh liquorice stick, hints of dried star anise, very structured but with great tannin/acid balance and with touches of rich cassis emerging with extended time in the decanter/glass. Sophisticated. This got very heady and resonant in a delightfully poised way......mounting thunder. Each glass just unfolded that bit more and the best is yet to come. Will keep my last bottle for 5+ years. (3996 views)
 Tasted by jnocera on 7/17/2016 & rated 93 points: Pure barnyard on the nose lots of earthiness. On the palate this is a great wine. Huge fruit blueberries and blackberries. Tannins are there but balanced and integrated. Great structure and balance. Finish is complex but smooth and long. A classic Dunn. After an hour open the barnyard on the nose is gone and its a pure cigar box nose. Very nice. (3733 views)

 Tasted by aagrawal on 1/9/2016 & rated 91 points: Dinner at Home; 12/30/2015-1/9/2016 (Fremont, CA): Deep ruby with age-appropriate bricking; while decanting had wonderful blackberry fruit, but that seems more reticent in the glass, some eucalyptus and mint, some blackberry; palate is full bodied, integrated tannin, moderate alcohol (~14%?), some blackberry fruit, slight bitterness that is unusual for a cab, flavor fades a bit through the midpalate; medium finish. Overall well balanced and enjoyable to drink but it didn't stand out to me. Will likely last for a while but may not improve. 90-91
Update: Improving with 30-60 minutes of air. Better fleshed out through the midpalate, which happened with the 1994 Napa Valley alongside it as well. The 94 has better concentration of fruit and the 97 seems a bit more ponderous and closed at this point... may need some time. Nose shows a bit more green vegetal at this point starting to hint at bordeaux qualities. I like this better now than when first tried... 90-91+ (2478 views)

Plenty of earth, tobacco, leather and red and black berris in the nose. Soft and rich mouth feel flavors reflect the nose with some chocolate on the finish.  Tasted by Redrum on 11/14/2015 & rated 93 points: Cork crumbled but wine intact. Jet black with lots of sediment, but a curiously reticent nose. Tremendous depth and viscosity, but strangely coupled with a slightly short finish. Still excellent overall, and in the mid to even late stage of its drinking window. Would definitely purchase again.  Tasted by Highlander on 11/1/2015: What a difference almost 6 years makes! This wine has gone from a sour oak bomb to a well integrated, new world style Bordeaux. Crisp and clean right after decanting. Color and tannins tell me this can make another 5+ years, yet the wine is clearly at peak. good fruit coming through, in balance with the tannins. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
