Dallas 2nd Wednesday Group - Dinner with guest chef Sharon Hage

Introduction

Urbano Cafe hosted guest chef Sharon Hage for a special wine dinner in their newly added section of the restaurant. Sharon performed her magic two seatings per night over two nights this week. The multi-course dinner consisted of the following:

* Chopped Chicken Liver and Deviled Goose Egg, Toast
* Gumbo Z’Herbes
Green Gumbo with Sweet Corn, Local Mustards and Micro’s
* Jack Stalling’s Black Bass
Two Asparagus Vinaigrette, Arborio Puree
* Pepper-Seared Bonsmara Ribeye
Marrow-Melted Leeks, Roast Baby Carrot and Kamut Pilaf
* Small Sweet Bites

Chef Hage was firing on all cylinders with every dish perfectly prepared. Job well done Chef Hage.

    Light yellow color in the glass, clear looking throughout with steady, full beading. Nose of lemon, yellow pears and yellow apples that carry straight through to the palate. Bright acidity, full bodied. Drink or hold.

  • 1995 Charles Heidsieck Champagne Blanc des Millénaires 94 Points

    Tasted non blind at a wine dinner.

    Yellow color in the glass, clear looking throughout with tiny, steady beading. Nose of brioche, creme, yellow pears and apple pie. Flavors of lemon zest, yellow pears and apple crisp. Medium to bright acidity, full bodied. Drink or hold. This was my last bottle and the best showing to date.
