Les Nomades hosted Dom Perignon with their rep here in Chicago who is the very talented, knowledgable and charming Meryl Muldoon. She walked us thru a brief history, introduced the wines and worked ahead of the dinner with Chef Roland to merge the various champagnes and food. Most glasses were of the Pinot Noir which lent itself to taste the champagne as a wine which in my opinion is clearly the new way to drink champagne. Exceptional evening culminated by the birthday celebration for Mary Beth Liccioni. The wonderful upstairs provided a superb backdrop to a very splendid evening.

Sautéed Langoustine, English Peas, langoustine sauce
Stuffed quail, free ken wheat and quinoa, Foie Gras Torchon on crouton (more please), boundiin sauce
Sautéed Turbot, white asparagus, saffron pommels Macarena, truffle broth
Roasted Breast of Duck, beluga lentils, sauce au poivre
Fresh Fruit Soup, petits fours
A couple of extra bottles from various attendees were opened.
An exceptional evening at one of Chicago's long standing high quality restaurants. Service, food, ambiance cannot be beat especially bring out lots of bubbly.
2003 Dom Pérignon Champagne 92 Points
France, Champagne
Clean and fresh. Good on the palate. Good nose, some depth, age able? Window to drink<15 years. Paired well with the canapés.
