Sherries at Aatxe with Jeremy

Two techies walk into a bar, order a bunch of Sherry, and proceed to generate terrible and awesome startup ideas.

• 2008 Alvear Montilla-Moriles PX Fino "En Rama"

  Spain, Andalucía, Montilla-Moriles

  Very light, elevated alcohol (15%) but holds it well. Nutty and oxidative with a bitter component. Salinity and slight tartness on the finish - malic. Short and not strong/long. Light and crisp.

• NV Emilio Lustau Manzanilla de Sanlúcar de Barrameda Papirusa

  Slightly more yeasty than the fino (different flor?) and slightly honeyed (botrytis????). I don't think it's as good as the Pedro Ximenez or the first Fino.

• NV Bodegas Toro Albala Marques de Poley Amontillado Viejísimo Solera 1922

  Spain, Andalucía, Montilla-Moriles

  21% alcohol and holds it well. Slight sweetness - maybe only 10g/L RS. Rich, nutty, and date-y, with suggestions of dried cranberries - almost red fruit. Great acidity and some salinity made this very enjoyable.
