Pan seared pancetta wrapped Atlantic shrimp in a sparkling wine reduction with a hint of citrus finished with European butter.

    France, Burgundy, Côte de Beaune, Meursault 1er Cru

    Light in color and very fragrant. A rich nose of buttered popcorn, citrus and flowers. Some butterscotch on thae palate, with a waxy mouthfeel. Enough acids for freshness, but the butterscotch became a bit too strong for me after a while.

    France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru

    Dark yellow in color, but very fresh and lifted on both the nose and palate. Baked apples, anise and pears. Very mouth filling, with hints of tropical fruits poking through. Good length. Quite fresh with no signs of premox.

Risotto al tartufo nero ~ slow cooked carnaroli rice with European butter, parmigiana reggiano and shavings of fresh black truffle.

    Good, healthy dark red, with a garnet rim. This one is definitely passed the secondary stage and well onto it tertiary phase. Dried leaves, soy, caramel and a savory quality. A bit of a lactic, milky quality. An interesting wine, but not that enjoyable for me. Others liked it (a lot) more than I. Not rated.

    Medium red, garnet rim. Sweet red fruits, cedar and spice. Palate offers notes of cassis and dried flowers. Silky tannins and a nice lingering, fresh finish.

    OMG, this was at a wonderful drinking spot. Fresh red fruits with some secondary dried fruit flavors just showing. Very claret-like, with a spicy, layered, velvety, mouth-filling palate. So packed with flavor. The tannins are still very robust, suggesting this still has quite a bit in the tank.

Abbacchio Arrosto ~ roasted double lamb chop served with baby beets and a red wine natural reduction.

Flight 4 - FLIGHT 3 (3 Notes)

Maialino al forno ~ oven roasted herb marinated baby suckling pig, slow cooked until tender and crisp, served with broccoli romaneschi and a natural cider scented sauce.

    Another gorgeous wine... head-shakingly good. Cassis, pencil shavings, earth and spice. So intense, so luscious, so rich, so lengthy, yet elegant at the same time.

    A surprisingly mute nose here. The palate was super, however. As we progress through the younger Vega Sicilias, we are now getting more fruit-driven, primary flavors. Bright, focused and grippy. This holds lots of promise, but needs serious cellar time.

    At 23 years of age, it remains a youthful, boisterous wine, full of potential. Deep, dark red, with no signs of bricking. Rich, juicy, plump and spicy, with ample tannins. A bit closed on the nose, but this is packed with fruit, with a meaty texture in the mouth. This needs time, but will be legendary.

    This remains one of the best 1994s out there. Still youthful, with powerful black fruit, licorice and lots of black pepper. Very rich and mouth filling with fantastic length. While enjoyable now for the bright, corpulent fruit, the tannins do clamp down. One sip certainly goes a long way... need to buy more...
