My first drink since 9/25 due to not quite resolved post-op issues. I chose champagne for the lower alcohol and also it’s ability to make me happy—which I really need right now.
This was everything I expected it to be. Beautiful nose of strawberries, raspberries and cream. Nicely acidic and in addition to the berries a hint of citrus on the palate. Lean and dry yet full of fruit. Good mousse but the bubbles did not persist long in the glass (which I was trying to nurse over a couple of hours). Had one glass on Saturday which I appreciated but not necessarily enjoyed, second glass on Sunday much better but not sure if that was my situation or actual day 2 improvement. Glad to have a few more of these.

As ironic and unlikely as it may sound, this was served next to the exact same wine that I had brought bagged from my cellar. Simply, we had 2 bottles of the 2014 right next to each other in bags, served blind, with none of us knowing we were tasting the same wine. Of course, when we pulled the bags off, we all paused, laughed but recognized that even though the wines were the same (and with the exact same disgorge date of March 2021) both bottles showed differently. My bottle had a floral aroma, with candied tangerine, sweet citrus and yellow apple. The density was lovely. It came across as powerful and concentrated, and with more air, a distinct lime zest note appeared, giving the wine a zesty and tense impression. In contrast, my buddy's bottle was less grippy, more fleshy and seemingly gentler and richer. Yeah, the tangerine was there, but it did not have the intensity of my bottle. The group had a consensus agreement that the bottles tasted different, and while they were opened at the same time, they definitely showed differently. Fascinating.

Light gold plus color. Split bottle over 2 hours. Brought this to Spoon & Stable for our anniversary. I have to disagree with many of the recent notes. I found this to be drinking quite well, when many of the '08's leave me more with anticipation for the future. To be sure, there's plenty of acidity, but this has the bright green orchard fruits that I love. This takes me back to the first vintage of Coeur de Cuvee that I had that just captivated me. Green apple, lychee and tropical fruits, apple blossoms, pastry cream, stone and lift on the nose. The palate has that tension and brightness, so fresh and energetic, crisp acid, crisp green apple, apple peel, lychee, apricot, pastry cream, hints of almond panna cotta, lemon curd, and a mix of wet stone and tingly chalk notes. This shows very well now and has a promising future as well. 94+ to 95pts(+)pts.

The cut of lemon is brilliant, electric. Yeah, the usual tangerine and some fresh cut green apple, too. But what stands out for this vintage of CdC is the delineation and the freshness that transmits through the wine. Gorgeous.

Champagne In My Backyard (My House): March 2015 disgorgement. The usual 80/20 split of Chard/Pinot Noir. This was from my cellar, I bought the bottle back in 2016. At that time, there was a stack of these on the floor locally and I recall balking at the price of $139 so I bought just one so I could add to my inventory. What a dope I was, as I was able at the time to buy a case or this stuff and while that would have pounded my wallet, and it was $20 more than I had paid for my original offer of the bottles from someone else, I took a short-sighted view. I know I am not alone in making this error. Floral with green apple, a honeyed apple actually, good energy and youthful. Powerful rich showing a chalky flinty finish. With more air, probably 4 hrs after I opened it, plenty of yellow apple and beautiful orange-driven citrus, which is such a hallmark of the Blanches Voies plot where this cuvee's fruit originates outside the village. Thankfully, the group left this behind so I can drain the last glass of this tonight....finished up the final glass tonight. My takeaway (the wine is pretty much still too) is a more plump, luxurious, juicy wine after the full day this has been open. There is a creamy lime element that is seductive, along with a gentle but persistent minerality that flows through the finish. This is aging so gracefully, a gorgeous wine in its presentation. This only makes me love Vilmart even more, if that was possible.

This bottle was disgorged in 2014 and cellared since 2015. 70% Chardonnay and 30% Pinot Noir. This was as good a bottle of Vilmart NV as I have ever opened. Fabulously complex, funk, cherries and yeasty bread on the nose. Palate of silk, fine bead, white chocolate. Just smooth and delicious, lots of vigor still but really getting polished.

Structure, power, chalk, with lemon curd, peach and slate/wet stone finish. Intensity with richness, with citrus throughout. I mean, hell, to pair this with the 2012 Emotion, either one would make my night but both together? What a gorgeous pair of wines. and this is classically good Coeur de Cuvee.

Damn these Vilmart wines age at a glacial place! This 11/12 disgorgement is so youthful still. Toasty and smoky on the nose with notes of green apple, lime and butter. The mousse is big, dense and persistent. Quite rich yet totally dry and highly acidic. Somewhat developed with notes of apple, toast and torrefaction. Finishes spicy and a bit angular. This is so obviously a case of "not there yet". Give it 3-5 years and it will be superb.

Have opened a half a case of this since release, I feel like I am getting to know the wine through time. April 2019 disgorgement. Opened yesterday, there was about an ounce or so left in the bottle so I stoppered it up for today. More than enough raw material to make a note. Yesterday, as we tasted the wine without much air, I recall talking about tangerine, pineapple and chalk. And the presence of that chalk was adding a good level of structure. Today, quite similar although the structure has relaxed a great deal, leaving the classic gentle, suave yet flavor concentrated wine that I love so much from Laurent and this plot. The fruit concentration here and how it expresses reminds me some of really good Chenin, when you can get the lift of the stone fruit, married with a honeyed acidity. This wine is kinda like that class of Chenin. Then, the finish has some of the cleansing lime zest of what Vilmart often does so well. It's really hard for me to think of a wine that so consistently brings me joy, bottle after bottle. And here, yet another winner.

This was the March 2021 disgorgement. And, I decided to pour this and the 2013 Grand Cellier d'Or next to it, both served blind to my guests. Like the GCdO, this is an 80/20 split of Chard/Pinot. The difference between the two wines (both have the same ratio) is that CdC sees more new oak, longer sur lie time and the vines are all a little older as compared to the the GCdO bottling, Sio, it depends on which you like, and your willingness to pay the premium for CdC and to get these additional inputs/features. For me, I buy both cuvees, in the same quantities and enjoy them both. In the instance of the 2013 vintage, I just find the CdC to be more concentrated and intense than the GCdO. Similar flavors of yellow apple, but in the case of CdC, the citrus seems more like orange than tangerine, and there is a pear in the CdC. In CdC, the chalk is more evident, as is a lemon flesh. Retasted the following day from the same bottle, this is just gorgeous. It's like the chalk has been liquified, with same honeyed orange/pear and a minerally finish. My final note I scribbled says 'badass balance'. For the sheer pleasure and joy I get from the Vilmart wines, it's hard for me to think of anyone in all of Champagne who for me does it better. Of note, there is still some of these 2013s floating around US retail and I have sourced some more. You an't go wrong with these 2 wines and the 2013 vintage.

JUne 2021 disgorgement. This is the Pinot dominant non-Rose cuvee, with 70& Pinot Noir and 30% Chardonnay (which is the inverse of teh Chard dominant Grand Cellier). Given the way Vilmart builds this cuvee (like Grand Cellier), this should be base of 2016 - 2018, with 3 years on the lees. Opened this yesterday. If my read of the wine is accurate, the Pinot Noir is giving this a good spine--It's very perceptible as it hugs the wine and carries the fruit very well. With the fruit, a tangy blackberry, a purple savory fruit that mixes with a yellow apple, then the citrusy lime and orange flesh that Vilmart brings through so well with just about everything the house makes. Finishes a little spicy, with a light minerality. Fresh and juicy, let's keep in mind that this is $42 US locally. Crazy I skipped buying this for so many years but I am gonna fix that, fo sho. Winner, baby.

What a wine! Rich and full bodied. Lemon curd, sweet biscuits and white orchard fruit. Seemingly endless finish. Luscious mouthfeel, density and the faint wood notes reminds me a little of the '06 Comte, but more mineral and spicy. Generous bead and acidity. I need to be careful not to make a scene when I drink this in public. WOTY?

Remarkably floral Nose – confident and elegant fruit aromas pull you into the equally-graceful bright fruit tones on the palate; pleasant barely-sweet pastry note, too. Feels as if there’s still potential to fill-in the back end, which will be to its benefit. Drinking young, with no meaningful tertiary flavor development; if anything, it’s in its open-and-relaxed/youthful stage, which makes it a lot fun to drink right now.

Disgorged May 2016, 80% Chard, 20% PN. We pulled this on a whim and I blinded it for a few good palates, alongside the 08 Larmandier-Bernier Levant VV BdB. There is sufficient acid here in the Vilmart to match against the sexier fruit and more opulent style as compared to the 2008 L-B. So, as I think about the 2009-2011 CdC bottlings, all now having tried on separate occasions in the past few months, I prefer the 2009 best, followed by the 2010 and then the 2011.

Opened yesterday, saved a few ounces for today with some of the CO2 still maintained but this is more still today than bubbly. I've had this disgorgement twice now--September 2018--and the richness on this bottle is evident, yet the acidity as usual is here to keep it fresh. This has an intriguing mix of fruits (mango, pineapple, tangerine, apple) with intense flavor of honeyed lime, exotic in taste when married together. And it might sound odd in a wine that I describe as exotic to have a mouthwatering quality yet this bottle shows that kind of tactical sensation. It reminds me of a dried citrus finish, the lime giving it that quality with added saline in the finish. In sum, this is even better than the bottle 3 weeks ago. Just flat out gorgeous.

Aww, man, I should have just dug out a 2007 but I was looking for a pre-birthday treat and was hoping this would be singing. Unfortunately, it's still a bit young. It has potential to burn, but it is all wrapped up in a tight ball. It didn't really open up by the next day either. What is there is beautiful and artfully etched. I expect that the spices and crystalized lemon drops wrapped in minerals will expand into a beautiful butterfly with time. I hope I can give it 4-5 more years. I need to get the 2007 into a spot that is easily reachable so I don't open any more of the other vintages I have.

March 2021 disgorgement. I worked through several small 1 oz pours from the bottle my buddy opened for a larger dinner. I sampled it at different temps, and even when a few of the pours had went still. My impression collectively about this vintage reminds me a lot of the impression I had of the wine when Laurent poured it for for me at the winery back in the Spring of 2022. As with that bottle, this wine shows distinct structure, driven by lime zest and tangerine, along with a savory, cleansing note. My confidence in the note here is very high, as what I an describing was affirmed throughout the small tastes over the evening. The only thing I cannot add is a chance to taste this tomorrow, a 24 hr impression, as the wine was drained. But, my summation of the 2014 CdC is a wine with power, and not so effusive as some other vintages of CdC. I really liked the wine tonight, and as a follow-on, we will be doing the wine again next week, blind alongside the 2015 CdC, and Grand Cellier d'Or from both 2014 and 2015. 2014 CdC is very good.

The CdC to me showed more power and concentration, even some coil. The signature of lime and tangerine were both present, but in an amplified, concentrated way, with even some grapefruit.....retasted this morning from the open bottle that sat out. So, it's had time to relax with air and just a few ounces deep down in the bottom of the bottle. Yet, with all of that potential to soften, the wine remains with coil my notes mentioned from last night. Lot of structure here.

Our Annual Champagne Tasting: My bottle. We're now many bottles into the tasting, and I've abandoned my tasting notebook. This was the first of the rosé flight. Fresh ripe strawberry, cherry cream, hazelnut, orange peel, mineral. It drinks better young than any other vintage Vilmart wine, but has the structure to age.

I opened this yesterday and we drank through about half the bottle. When I poured the first glass, I smelled the wine and tasted it and it was Chablis-like to me, with a sea breeze aroma and a lemony imprint. Huh. I would not attribute this kind of signature to Grand Cellier. Retasting again today, this is just a more lemon-driven version of the cuvee. Yeah, there is the typical green apple and tangerine, and these are infused through the wine, giving it some opulence but there is that beam of lemony imprint that makes this disgorgement unique to me. I bought a trio from this disgorgement and will probably let the other two get staged for drinking over the next 3-4 years, to enjoy the way this disgorgement is built.

It's not hard to polish off a wine like this at one time, but I managed to spread it over two days. Disgorged June 2017, with the consistent composition of 80% Chard / 20% PN, with around 7 g/l dosage and just under 4 years on the lees, all the usual inputs for Grand Cellier d'Or. This drinks great chilled or warm. Green apple, a richness that seems honeyed when warm, with tangerine and a little bit of red berry. Like many Vilmart I have written about in the past, this bottle too shows the requisite bright acidity and freshness. It's these two qualities, along with the richness and fruit balance, that makes Vilmart one of my absolute favorites from Champagne. It finishes with some structure that suggests the wine will be ageworthy, yet I found no guilt in finishing this wine now, as it drinks so good. Beautiful.

My oldest Vilmart GR...70% Pinot, 30% Chard, DG 9/2014 I believe 2011/12 vintages...the age has done wonders here, as this wine is SO elegant and in total max enjoyment mode! Gorgeously pure apple/cherry/candied pear fruits...creamed up nicely with a little almond liqueur mousse and cherry cordial candies...crisp and tart with super bright lemon, ginger, cherry skin...fine tiny popping bubble dance on the palate...leesy mousse calms...showing wonderful harmony and grace...plenty salty crushed geology tames the sweetness...the little bit of age on this has propelled this wine into levels WAY above its price point. Lesson learned...age these suckers out a few years! Great wine!

Holy cow! This was the last bottle from a purchase in 2004! I ran across it in the cellar a few weeks ago, and figured it might still be alive. Was it ever! Deep, ripe strawberry fruit was still prominent, but had developed an even deeper richness, with herbal and warm bread tones. It was mouthfilling and persistent, holding up well through our dinner. Amazing Champagne!

Super Tuesday (Chicago, IL): An excellent edition of this wine, but showing more of the 2008 acid than notes that I would consider typical for Vilmart. Indeed, next to the 2002, the difference in "style" is very marked. This is taut and its acidity is at the forefront and dominates the palate, while the oaky, fat elements seem far away in the background. I felt that this wine did loosen up a little bit with more air, but more realistically, the thing we want to do is to give this more time in the bottle.

A group of us had this, alongside 2008 Roederer Cristal, a fascinating comparison. Both needed some air to really open up. I've had the Vilmart a few times, and it is one of my favorites of the vintage, with lovely medium intensity, mouthwatering light tartness, some nice touches of minerality, finishing with excellent length. Sampling this as the evening wore on, there is even more coiled intensity and layered complexity, great acidity, and beautiful minerality, with a light saline tartness that reminds me of a great Chablis. A simply gorgeous Champagne, elegant, complex, doesn't try to knock you over with its power, so much going on in this wine.
