There is some spice and decent acidity but last night, late in the lineup, the wine just seemed to big for my tastes. 1/4/2016 - Outplaying Likes this wine: NRSeeing Bob H's comment and others whose palates I respect on this wine prompted be to open a bottle before it's too late to get more. I will be working late a few nights this week so I cracked a bottle at work to go with a salad and some pork butt I smoked over the weekend. Served at about 60 degrees. This is the real deal. It has a lot of the characteristics I love about Chablis. Sea air, saline and mineral with lots of acid to keep it lively. Smells like the liquor of a fresh shucked oyster. And 16 bucks?! 12/21/2012 - Outplaying Likes this wine: 89 pointsThis wine was opened yesterday I believe, and was in our refrigerator at the office. Poured a glass to with a sausage pizza at lunch. Once the wine warmed up a little, aromas of tobacco, suggestions of earth and some dark fruits. On the palate, there is a little tobacco, earth, leather, cedar, chocolate and tart darker fruits like black berries and plum. Medium bodied with a little texture. 12/17/2012 - Outplaying Likes this wine: NRBottle #1129. Initially this showed jammy strawberry and red cherry aromas. On the palate the wine seems simpler than the bottle a year ago. Mostly red fruits, a slight stemmy component, a little cinnamon and spice. I don't get the white pepper that I did a year ago as I think the wine and whole clusters are more integrated. I really like the weight of this wine, or lack thereof I should say. It is concentrated but not heavy at all. I also like the acidity. As it opened the wine put on a little weight and became a little sweeter similar to the bottle a year ago. Because of that I think I liked this better when first opened. Wish I had a couple more to see where this goes but this was the last of two bottles. I'd buy again. Day two: The last 1/5 of the bottle had the air pumped out and it spent the night in the refridgerator. Poured a glass and let it warm up. It held up well, and may have shown better than they day before as it seemed more in balance. The fruit wasn't as sweet, there is still some spice, nice light-medium mouthfeel, and a little texture. Oddly, I believe that one was extra brut, and it showed richer and rounder, and this is brut and it seems more lean and austere.
