Flight 1 - The bubbles (7 notes)

Aromas of golden, rosy peaches with bright straw and dried earth. The earthiness and straw kinda comes at you with a closed fist. I flinched a bit, thinking it was going to hit me with something heavy, but instead it was more like a light tap.

Palate showed light oranges and cherries, some light topsoil, and bitter minerals on the finish. The earth and straw that showed strong on the nose and seemed to get in the way of the fruits on the palate, which made it seem a bit heavy. The somewhat metallic minerals also made the finish seem a bit weird.

Nose showed gentle oxidative notes with a white, bitter floral note that helped give it some lift, golden honey, light notes of peaches, and peeled tangerines with its veins of pith. The aromas of peeled tangerines are pretty vivid, like you’re actually holding them in your hands.

Flavors seem to match the nose completely with nice bitter hay, a somehow fresh oxidative note, pleasantly deep golden fruits with a slightly odd bitterness (like overgrown tangerines as a result of overwatering). Shows just a bit better with some air time. Great freshness and lift, and thank goodness for it because I’m sure without it, this would’ve lost a ton of excitement.

Unfortunately, I did not note down the disgorgement date, it was smeared off by accident.

Fresh fruits, light in profile, nice floral aspect with tons of white flowers and dried earth.

The palate shows quite similarly to the nose with nice freshness and lift. Minerals, light fruits, gentle bitterness, hay, and dried earth. The juiciness of this champagne blend gives it an awesome liveliness on the palate. Don’t feel bad opening these now cause these are pretty awesome.

Nice toasty and bready-ness that is subtly propped up against the fruit. A deep, yet clean, fresh yellow fruit notes of Golden Delicious apples and fresh, yellow pears.

Clean, and smooth fruits on the palate, with a mineral and hay finish. Nice fruits here, but almost seemed like still wine, seemed a bit flat with time.. It could be due to its age in that it may fall flat sooner(?). I’m sure this can still go for years though.

Aromas of yeasty, fresh fruits, while maintaining an airy and light delivery on the nose.

Similar airy and light fruits on the palate, swift on the palate, and lightly bitter hay on the finish. With time, the fruit comes through with a second wind. Fruit showed much better with time, a gentle kick of spice (or some spicy zest), and nice stony minerals on the finish.

First bottle of Sir Winston Churchill and it did not disappoint!

Light mix of honey and hay on the nose, with a soft touch of fruits. Very airy and fresh.

Palate showed the same characteristics as the nose with good hay and bitterness of minerals with a gentle spritz of fruits. Fresh yeastiness, but more like dough before it is baked into bread. There’s a strong mineral note on the mid to end palate which I wish would have softened up a bit, but it was a bit hard and pronounced.

Scent of aromatic white berries with the gentle ripeness of yellow berries. There are also clean straw notes with a gust of fresh air. A field of drying, tall straw on sun baked earth.

Hay and bitter stones on the palate, with light and airy fruits. So fresh, almost young. Light earth on the front and mid palate and awesome effervescence. There is this blend of something like fresh, crisp red apples with tons of white flowers, and a satisfying dusty earthiness.

This kinda makes me wonder how it was younger, not older. This can still go many years but I am curious how much fresher this would have been if tasted a few years earlier. Loved the swiftness this provided.

Flight 2 - The whites (10 notes)

White - Sweet/Dessert

Youthful, golden fruits with an emphasis on bright and runny honey (the kind where it runs almost like water, and not the thick, viscous kind). Young, slightly fuzzy apricots with great freshness and aromatics.

Deep yet light honeyed apricots, bitter wax and heavy honey. There’s a thin streak of freshness that provides a nice swiftness on the palate. There’s also a gentle but firm spice on the palate. With the freshness and weight this thing has, time will reward those with patience and this should develop an awesome integration with time.

Aromas of washed stones, light and softly intense fruits, with almost a slight creaminess.

Bitter stones, dark bitter earth, deep yellow fruits, and a dried hay on the palate.

This shows a lot of promise. Unfortunately, I think this was consumed way too young. Wait the proper amount of years these generally need. If I had to guess, 7-10 years. I see this showing much better with more integration when given more time. Might’ve killed a baby here.

A bit of funked, deep yellow and bitter white fruits with a gently bitter, honied wax on the nose.

Similar notes on the palate, dry and bittered wax. Fruits open up with time, showing a bit better integration.

This was good but wished it had a bit more oomf in the freshness department. Delivery of flavor was there but lacked a bit of excitement for me.

Airy light stones, really light fruits, gentle aromas of straw, and fresh grass.

Really bitter minerals and fruits. This might be a good definition of austere: very bitter and stern and not giving with the fruit. With time, the air helps this only a little with fruits being a bit more showy and slightly better integration.

Decant long and hard, or just wait 6-8 years to revisit. Oh, definitely killed a baby here.

Awesome struck matchstick note, and aromas of fresh and golden green apples with fresh pears.

Bitter, green apples on the palate but also a good freshness to balance out the bitterness. Hay, gentle steeped tea and bitter minerals on the finish. Awesome ripeness to the fruits with good acidity that provides a good freshness to everything.

I've only ever tasted a few from HB, but it definitely seems like a producer I can rely on!

Nose of oxidative orange peel, and bitter lime skins. There is a scent of water and stones, like river pebbles.

The palate showed the same as the nose, with orange and lime flesh, skins and pith.

Might be one of the very few Chablis I’ve had that didn’t really show any kind of excitement or liveliness. I wonder if this was meant to be tasted young. The flavors are there, it just lacks juiciness and freshness for me.

Nose of oaked pineapples, dry earth and hay. Fruits are even more showier with time, and white flowers developed, the kind with the thick white petals.

Palate showed deep stones and fruits, light hay, and almost duty minerals on the finish. The fruit here is nice and quite giving, and while not showing a whole lot of acidity (which is astonishing), there is a nice balance between the fruit and the weight this has, showing good integration already. I wouldn’t know how long to cellar these but these are pretty good even now. Curious to see how well these age.

Dried oak on the nose with dried straw and topsoil. The fruit is there but a bit faded and hidden somewhere behind the straw.

Great honey and wet hay, with damp earth and white and yellow fruits (more on the darker spectrum). There is also a note of something like a walnut shell. Might want to drink these soon, don’t know if they will go for longer.

That awesome dried matchstick note with awesome white fruits to give. So aromatic with the fruits and a good grounding of subtle earth and somehow a tinge of lime freshness. Pretty white and yellow flowers on the nose as well.

Flavors of yellow fruits with an attractive bitterness, a dried earthy bitterness, with bitter minerals on the finish. This is so giving on the palate, a complete pleasure to taste.

Deep yet light honey on the nose with melons that provide enough freshness, honeyed white flowers and a dry, pulverized, stony mineral note.

Palate matches the nose with the addition of bitter waxiness, deep golden honey with bitter minerals. Again, similar to the other half bottle I’ve had before but this half bottle is a touch more lively. It’s missing the freshness of the standard sized bottle. Still good, but damn.. it’s like knowing twins and seeing one age noticeably faster than the other.

This was paired with an awesome creme brulee (shouts out to bsumoba) and it was smackin’.

Flight 3 - The blinds (3 notes)

Red
2020 Domaine Jean-Louis Chave Hermitage France, Rhône, Northern Rhône, Hermitage

Aromas of eucalyptus, and fresh red fruits with brightness. A touch of bright, sour blueberries as well. This reminds me of a Paso grenache (neon berries, or the Jolly Ranchers artificial notes).

Palate showed dried earthiness, dried jerky, and dark and austere red fruits. This did not show what I thought it would, and it is hard for me to see it getting there.

Day 2 [technically day 3, (bottle recorked, stored in cool temp) did not taste on day 2 but did on day 3]: Aromas showed darker red fruits, with a freshness with the aromas of neon berries/Jolly Ranchers moving more into the background. There are some notes of Iberico ham and red floral notes. A strong scent of dark earth and plenty of dark, wild undergrowth.

Flavors show a bit more of a juicier tartness of dark red berries from a grenache, some graphite, deep earth and dried leaves. There’s notes of dried twig and tree bark as well. Finishes with plenty of tannin like steeped tea, bitter minerals and that dried oak note lingers on.

This showed much better with a ton of slow-ox (corked back and stored upright in a cool area ~56°). I hate saying this but this is gonna take a good amount of time for it to integrate and develop more, guessing around 8-10+ years. It can use a healthy decant if you plan on opening soon.

Fresh and crisp white stone fruits with a bit of starfruit skins on the nose. Tall, green grass and wet soil. The nose reminded me a lot of a sauvignon blanc.

The palate showed bitter freshness with a good weightiness on the palate. Nice white fruits to the palate but seemed heavily washed, making the fruit flavors a bit light and almost airy. These fruits trail into the finish, along with some bitter minerals.

[Coravined a pour] (No initial rating, couldn't give it one honestly on the first go around)
A heavy wall of wax and notes of petrol that stand in the way of this damp oaked fruit.

Palate showed bitter yellow and heavy fruits. This is big, and so round, and even thicc.. Could’ve used an injection of acidity but I don’t know if it would ever get some. Maybe with a ton of time, the weighty fruit recedes some and allows the acidity, if there is any at all, to strut its stuff. to Personally, I don't know if food would even help this but supposedly it should.

[Popped cork after 6 days]
Nose is surprisingly different: yellow flowers with a spritz of deep honey, and halved pineapples with a nicely bitter lemon zest. A pleasantly creamy characteristic adds depth, almost like a drop of condensed vanilla.

The flavors are like biting into a slice of pineapple with all its sweetness extracted, leaving just its juicy, bitter and mineraly flesh. Tall grass and earth on the mid palate. Bitter hay, minerals, lime zest and dirt dry straw trails into the finish.

Decant HEAVY if opening now, and room temp actually seemed to improve this. It’s weighty but softens up with a lot of time. Should also go well with food, with what though, I can’t tell ya.

Flight 4 - The extra treat (1 note)

N: Floral aromas of dark red and purple flowers with a nice bitterness that provides a nice contrast to the pretty flowers. Deep earth with a strong scent of dark, dried tree bark, and dark fruits hiding in a dense forest.

P: Brooding dark black and red fruits are present as a backdrop but it’s there as a menacing presence. Just like the nose, awesome earthiness with dark bitter tree bark, dark green undergrowth, and graphite provide a pleasurable contrast.

When it came to the nose, it was nothing close to what the aromas were like when I had this in the vineyards. This took on a more darker and serious profile, which is always welcomed in my book. When I had this around a year ago, it was quite bright, tart and fresh. Awesome.
