Wednesday, June 22, 2022 - Raul Perez tasting; 6/17/2022-6/22/2022 (Oinoscent): pH 2.8-2.9, 20yo oak, no sulfite before bottling
The wine shows high intensity in the nose, oxidative notes, almond, citrus, more grapefruit notes, quince, smells a bit like Jerez, grapefruit peel, vegetative notes, dried herbs, olive notes.
In the palate the wine shows the same profile as the nose, almonds, salty, high acidity, density, underripe citrus fruit, grapefruit peel, full body, long finish
Very close to Jerez sherry but unfortified, very interesting
