Random wines tasted during service (Oinoscent): Bottle opened by colleague during service to drink from Oinoscent cellar, flash decanted and blind tasted The wine shows fragrant profile, strong oak frame, red (dried) fruit, cherry, sweet spice, peppery, nutmeg, a few bitter almond notes in the back, chocolate and espresso beans, pyrazine notes Palate with the same profile, the tannins are there but fine, the palate shows some evolution, warmth from alcohol, pyrazine again, coffee-spice-old oak, tense, long finish -/- At first I thought US, then I thought it could be european, the nose is more fresh, the palate more decadent, called it a non-european Cabernet based. It definately needs time to open up, after about 2 hours, it was super smooth, not so warm and the oak influence was less obvious. Solid wine

Random wines tasted during service (Oinoscent): Brought to drink at Oinoscent during service Forward, showing a beautiful profile, dried citrus, concentrated fruit, tropical fruit, a few rubber notes with blocking the fruit though, spice in the back, ethereal, welcmong, decadent Palate very smooth, elegant, ripe citrus fruit, pear, grapefruit, quince, moderate to high acidity, a touch warm, med to full body, long finish with a some bitter notes. The wine seems to be at its peak

Random wines tasted during service (Oinoscent): Brought to drink at Oinoscent, bottle open without decant, slowly drank throughout the shift Extrovert, ripe fresh red fruit, quite spicy, savoury, bacon notes, decadent but still youthful Palate elegant, red fruit, med body, juicy tannins, vibrant acidity, bacon, gamey, med to long finish with some dried red fruit # 2hr later # The wine keeps all the red fruit, the spice and the oak notes settle down and get more in balance with all the fruit. The palate is quite fresh, the acidity is there with some garrigue notes emerging
