Tuesday, March 5, 2024 - Italian Wine Scholar Class @ The Texas Wine School. Textbook natty, it split the class among generational lines. Organic, biodynamic, unfiltered, unfined, 75% Merlot & 25% Pignolo, w/ wild yeasts & no added sulphites. Cloudy ruby. A touch of Brett gives way to pronounced volatile acidity & ethyl acetate (nail polish remover). After lots of air, it segues into candied red cherry, spiced cranberry, bruised red apple cider and weed. Dry to off-dry, w/ ripe, juicy candied red fruit. A slight sparkle on the tongue & searingly high acidity to balance the fruit. Med (-) tannins & med alcohol (13%). Medium bodied, w/ med flavor intensity & sweet & sour, balsamic, savory finish. An acid trip in a glass. Drink now, not intended for aging, although better a week after opening.
