Thursday, December 21, 2017 - Small Chambertin-Clos de Bèze Dinner (S.K.Y. Restaurant - Chicago IL): Started off very tight and tart, albeit powerful. Opened and got richer after 15-20 minutes. Lots of apple and pear with some spice hints that eventually gave this a soft, rounded edge for Blanc de Blancs. Long and powerful. Certainly better to cellar for a few years and then enjoy medium term, 2020 forward.
