Friday, July 27, 2012 - What a fun & tasty evolution! Popped and poured a chilled bottle. Figured we opened it too soon - it was very acidic with little depth. But wait, there's more! We left the bottle open & put it bak in the fridge. About two hours later we were pleased with how it evolved and enjoyed a small glass. The we let it sit out, open for another 1.5 hours. Evolution at its best! Slightly tart cherries on the front of the palate moving to a rounder, full-bodied and slightly tannic fruitiness mid-palate. A really, really long finish ensures you can continue to enjoy this wine... Give it lots of time to open up if you are enjoying now. Stems up!
