    7/5/2017 9:49:00 PM - Or mute phase? I think it would be extremely early for this vintage to be on the downslope! Im still waiting for most of my 04's to reach their drinking window (for the level of maturity that I prefer).

    Great Champagne like many Great White wines have just as much need to time in the cellar to mature as the great reds of this world.

    Too many do not realize that light, no matter if it’s artificial or not is the enemy of wines but especially of champagne.

    I keep my champagne in the coldest part of the subterranean cellar that is very damp. I love old champagne, as well as young champagne from certain vintages like 2003 or 2005. Others need decades and can have really dumb phases. It’s a bad time to open a 1996 Krug. All the notes from people I trust have stated that it’s just off. You don’t want to be drinking a fine example of any house when it’s off. Better to pour fresh cremant.
