Saturday, November 14, 2015 - Orangey brown in the glass. There had to be something wrong with this bottle, although it looked perfect, because it made for very curious tasting. Seemed like maybe too much oxygen at first, delivering mushrooms and mature maple. Interestingly the bubbles were still super intense.

Way different and way better after three hours of air. Peaches, raspberry, and creamy brioche. Not amazing but an impressive turnaround. A real let down as it seems like this could have been an amazing bottle, although it was quite unique an complicated at the end. Will just have to find another one.
