Friday, September 22, 2023 - A banger of a way to start an evening. So fresh and chalky, with a torrent of fine bubbles and seaspray. Fresh red apple, a touch of brioche and autolytic umami, and a ton of crushed rock, giving it tension and lift. Acidity is present but in no way overwhelming. Hardly any evolved notes at all and I could imagine going another 10 years. So very, very moreish.
